Instrukcja
Step 1 – preparation of the sponge cake for the cake
- Sift both flours and cocoa through a sieve.35 g wheat flour – all-purpose, 35 g potato starch, 1 tablespoon unsweetened cocoa powder
- Beat the egg whites together with sugar until you get a thick and white foam – similar to meringue.2 egg whites, 100 g sugar
- Add the egg yolks to the egg whites and gently mix.2 egg yolks
- Add the flour and gently mix.
- Transfer the sponge cake batter to the prepared pan.
- Bake the sponge cake in an oven preheated to 170 degrees Celsius (convection mode) for about 10-12 minutes – until a dry skewer comes out clean.
- After baking, cool the sponge cake and peel it off the baking paper.
Step 2 – preparation of dark chocolate mousse
- Cover the gelatin with a small amount of cold water – just enough to cover it – and set aside for a few minutes to swell.1.5 teaspoons gelatin
- Heat the heavy cream in a saucepan until it is hot.200 ml heavy cream
- Add the broken chocolate to the cream and mix into a smooth glaze.200 g dark chocolate
- Briefly heat the gelatin (if you don’t know how, check my tips below the recipe) and add to the melted chocolate – mix thoroughly.
- Cool the chocolate to room temperature.
- Beat the cold heavy cream at high speed with a mixer until you get thick whipped cream.200 ml heavy cream
- Combine the whipped cream with the cooled chocolate and gently mix.
- Place the sponge cake on a cake stand or flat plate and secure a springform pan ring or a special cake collar around it. You can also soak the sponge cake before applying the mousse.
- Spread the chocolate mousse over the sponge cake and refrigerate for about half an hour. During this time, prepare the strawberry mousse.
Step 3 – preparing the strawberry mousse
- Cover the gelatin with a small amount of cold water – just enough to cover it – and set aside for a few minutes to swell.2 teaspoons gelatin
- Blend about 60g of strawberries with a blender.approx. 180 g strawberries
- Sieve the blended strawberries to remove larger pieces and seeds. Measure out 60 ml (1/4 cup) of strawberry mousse.
- Pour the heavy cream into a bowl, add the broken chocolate and strawberry mousse.50 ml heavy cream, 200 g white chocolate
- Heat everything together in the microwave for about 1-2 minutes and mix thoroughly.
- Briefly heat the gelatin and add it to the chocolate mixture – mix thoroughly.
- Cool everything to room temperature.
- Whip the cold heavy cream at high speed with a mixer until you get thick whipped cream.200 ml heavy cream
- Add the cooled white chocolate with strawberries to the whipped cream and, if you wish, a little food coloring (to give the mousse a nice pink color – I added some) – mix gently.pink food coloring
- Add finely chopped strawberries to the mousse – about 120g – you can use more.
- Spread the strawberry mousse over the chocolate mousse and put everything back in the fridge for about 30 minutes.
Step 4 – preparing the white chocolate mousse
- Cover the gelatin with a small amount of cold water – just enough to cover the gelatin – and set aside for a few minutes to swell.2 teaspoons gelatin
- Heat the heavy cream in a saucepan and when hot, add the chopped white chocolate – mix until you get a smooth glaze.50 ml heavy cream, 200 g white chocolate
- Briefly heat the gelatin and add it to the chocolate mixture – mix thoroughly. Cool to room temperature.
- Whip the cold heavy cream into thick whipped cream.250 ml heavy cream
- Add the cooled chocolate and mix until combined.
- Spread the white chocolate mousse over the strawberry mousse and put everything in the fridge for at least 4 hours.
Step 5 – preparing the chocolate glaze
- Heat the heavy cream until hot (if using dark chocolate, heat 100ml, and if using milk chocolate, heat 50ml).50-100 ml heavy cream
- Add the broken chocolate to it and mix until you get a smooth glaze.100 g chocolate
- Leave at room temperature to cool.
Step 6 – decorating the chocolate-strawberry cake
- Carefully remove the cake ring from the cake.
- Pour the cooled glaze over the top of the cake and spread it evenly.
- Decorate the cake as desired – fresh strawberries work well.

What is a chocolate strawberry mousse cake?
I prepared this wonderful chocolate strawberry cake for a special occasion, which is another birthday of my blog. It has been 12 years since my first post with a chocolate muffin recipe appeared here. Since then, the blog has grown significantly, and you can now find over 1800 recipes for delicious cakes, sweet desserts, as well as breakfasts, or simple and quick dinners. But cakes and muffins are still closest to my heart and palate and take precedence among all recipes.
Over all these years, a large number of loyal readers have also gathered here. I sincerely thank you for all the kind comments, for various advice, and also for the recipes you’ve shared with me to try. Thanks to you, I still want to constantly test and bake, take photos, and recently also many preparation videos. I am very happy that you appreciate my work and gladly return here. Where did the inspiration for a cake with chocolate and strawberry mousse come from?
This chocolate strawberry cake could also be called a Neapolitan cake. And why? It is inspired by Neapolitan ice cream, where three flavors of ice cream are combined in layers – chocolate, strawberry, and vanilla. And similarly, in this cake, you have three flavors of amazing and light mousses – intensely chocolate mousse made from dark chocolate. Sophisticated and velvety. Plus, a light and refreshing strawberry mousse with pieces of fresh strawberries. Finally, a sweet white chocolate mousse, to which you can add vanilla extract. To this, a light and fluffy chocolate sponge cake and a thick layer of chocolate glaze. Such a mousse cake not only looks fabulous but also tastes wonderful. It may involve some work, but the result is absolutely worth it.
The inspiration for preparing this particular cake was a cake I once spotted on pinterest – there, the cake was prepared on a heavier brownie base, and instead of strawberry mousse, raspberry mousse was used. Here, you can also make raspberry mousse to get a slightly different cake flavor.

Ingredients needed to prepare a chocolate strawberry cake
Although the list of ingredients in the recipe seems long, many of them are repeated for individual elements. Therefore, below I present a shortened list of essential ingredients and their possible substitutes.
- dark chocolate – to prepare this cake you will need a total of 300 g of dark chocolate – if you also use dark chocolate for the top of the cake, if not, buy 200 g of dark chocolate and 100 g of milk chocolate in the store.
- white chocolate – for the strawberry mousse and white chocolate mousse you will need a total of 400 g of white chocolate. Pay attention in the store whether the chocolate you buy actually has 100 g per package, because often these chocolates have a reduced weight to 90 g or even 80 g.
- gelatin – I used a total of 5.5 teaspoons of powdered gelatin for all three mousses – that’s about 25 g of gelatin.
- whipping cream – I used liquid whipping cream in cartons with 30% fat content – in total, you will need 1000-1050 ml of whipping cream to prepare the entire cake. The final amount depends on what kind of chocolate you will use for the cake glaze.
- strawberries – for the strawberry mousse you will need about 180-200 g of strawberries. These should be fresh strawberries, as most of them are added in chopped form to the finished mousse. Frozen fruits will be unsightly after thawing and will not look good in the cake. Instead of strawberries, you can also use raspberries if you prefer these fruits – raspberries should also be fresh.
- food coloring – pureed strawberries are added to the strawberry mousse, but unfortunately, there is not enough of it to give the mousse a special color. Therefore, if you want to achieve a nice pink color for the strawberry mousse so that it stands out from the white chocolate mousse, you can add a little food coloring. I used pink gel food coloring. Red food coloring can also be used. Gel or powder food coloring will be best.

How to prepare a fluffy sponge cake for a cake – watch the video
You can prepare the chocolate sponge cake for the cake using any recipe – if you have your favorite. The best will be a recipe for a sponge cake from about 2 large eggs, because you need a low sponge cake here – one sponge cake layer. You can, of course, use my recipe given above. In the cake video, I don’t show how I prepare the chocolate sponge cake, because I wanted to show the preparation of the mousses in more detail. You can, however, see here how I prepare such a sponge cake. In the video, I make it with 4 eggs, here a sponge cake from half the portion is needed.
Preparing chocolate mousse – tips
Chocolate mousse is spread directly onto the cooled sponge cake, so start preparing this mousse first. I recommend using dark chocolate here, which has a more intense chocolate flavor. If you prefer sweeter cakes, you can add a little powdered sugar to the mousse to make it sweeter. I didn’t sweeten it, because the whipping cream adds a bit of sweetness to the chocolate, and that’s enough for me. First, melt the chocolate in hot whipping cream – to do this, pour the cream into a saucepan and heat it on the stove until bubbles appear at the sides. Then remove the saucepan from the stove and add the broken or chopped chocolate. Such broken chocolate will melt faster and combine into a smooth chocolate mass. Add dissolved gelatin to this still warm chocolate. Cool the chocolate at room temperature. Whip the chilled whipping cream until you get a thick whipped cream. I whip it with a mixer on high speed for several minutes. Add the cooled chocolate to the whipped cream and gently mix with a spatula or spoon. Spread the ready mixed mousse onto the sponge cake.
You prepare white chocolate mousse very similarly, only you replace dark chocolate with white chocolate and use a little less whipping cream to melt it. You spread the finished white chocolate mousse on the strawberry mousse.
How to prepare gelatin for mousse?
For each mousse, you prepare gelatin in the same way. I use powdered gelatin and pour the measured amount into a glass, add cold water to cover the gelatin, and set aside for a few minutes. During this time, the gelatin swells and becomes somewhat firm. Then you can heat it. It’s best to do this in the microwave. Place the glass with gelatin in the microwave and heat for a maximum of 10 seconds. When the gelatin dissolves and starts to gently rise, remove it from the microwave and stir. Pour immediately into the warm chocolate and mix thoroughly. Leave this chocolate on the kitchen counter to cool – usually about half an hour is enough.

Preparing strawberry mousse – tips
Preparing strawberry mousse has several stages, and you start by preparing the strawberries. Wash fresh strawberries, dry them, and remove the stems. Cut about 60 g of the fruit into smaller pieces and blend them finely – you can use a blender or food processor, or if you don’t have these devices, mash them thoroughly with a fork. Transfer these mashed strawberries to a fine-mesh sieve and press them through the sieve with a spoon. This will help remove seeds and larger pieces of fruit. Transfer the resulting mousse/puree to a measuring cup or glass – you will need 60 ml (i.e., 1/4 cup) for the mousse itself.
Add the measured strawberry puree to a heatproof bowl with whipping cream and broken white chocolate. Heat the mixture until the chocolate melts. It’s best to heat the bowl in the microwave – in one-minute increments. If you don’t have a microwave, heat the bowl in a water bath. Pour a little water into the bottom of a small pot, place the bowl with chocolate, puree, and cream on top. Heat the pot with water so that it steams and heats the bowl from below. Stir the mixture until you get a smooth glaze. Add gelatin to the warm strawberry glaze and cool at room temperature.
Mix the cooled chocolate with whipped cream – I added a little pink food coloring here for color, because the mousse had a very pale color. Thanks to the food coloring, the mousse took on a beautiful pink color and the cake layered with it looked absolutely fantastic. I highly recommend adding a little food coloring to give the mousse a more vibrant color. If you are making raspberry mousse for the cake, you may not need to add food coloring, as raspberries give a stronger color than strawberries.
Finally, I added finely chopped fresh strawberries to the strawberry mousse, which made the cake look even prettier when cut and gave it a more strawberry flavor.

Assembling the chocolate strawberry cake
This chocolate strawberry cake comes out quite tall, so it’s worth assembling it in a special tall cake ring. What if you don’t have such a ring? Then use the springform pan ring in which the sponge cake was baked, but additionally secure it with baking paper – stick it to the sides of the springform pan so that it extends a few centimeters above the height of the ring. It’s best to use two layers of paper. You can also use special thick cake foil.
You can additionally soak the sponge cake placed in the ring. I used water lightly sweetened with sugar. You can also use light tea – regular or fruit. And if the cake will only be eaten by adults, you can soak the sponge cake with water with a touch of rum or chocolate liqueur. On the thus prepared sponge cake, first spread the dark chocolate mousse and chill in the refrigerator for about 30 minutes. Then spread the strawberry mousse and chill again for about 30 minutes. Apply the white chocolate mousse and now leave the cake in the refrigerator for at least 4 hours. This will allow all the mousses to set properly.
By the way, I’ll tell you that this chocolate cake with strawberries can be prepared with half the portion in a mold with a diameter of about 16 cm. Such a cake will be ideal for about 5-6 people.
How to remove a chocolate mousse cake from the ring?
If you used a springform pan ring lined with baking paper inside to assemble the cake, simply unclip the ring and gently peel the baking paper from the cake. If you used a tall metal ring, you can gently warm it before removing it, so that the mousse detaches nicely. To do this, you can gently rub the ring with your hands to warm it up, or lightly heat it with a hairdryer. Finally, you can smooth the surface with a spatula.

How to decorate a chocolate strawberry cake?
I decorated my cake not only with chocolate glaze, but also, while preparing the mousses, I set aside a little white chocolate mousse and dark chocolate mousse and transferred them to separate piping bags with different cream tips. This allowed me to pipe these mousses on top of the cake, creating a very quick and easy decoration. In addition, I arranged sliced fresh strawberries on top. You can also sprinkle the cake with colorful sugar sprinkles or even arrange fresh flowers.
How many calories does a Neapolitan mousse cake have?
This cake is not low-calorie, but it’s no surprise when you see the amount of chocolate and whipping cream used. 100 g of the cake has about 350 kcal, but if you divide it into 12 portions, each will have about 640 kcal (carbohydrates 47 g, protein 9 g, fats 46 g). But you can always cut a thinner slice if you’re counting calories ;)
