Today I invite you to try this amazing double coffee cake. Double, because coffee is added to the creamed butter cake and to the light cream I used to decorate the top of the cake. The whole creates an incredibly delicious, super fluffy and moist cake. You must try this recipe!

  • 120 ml milk (- I used 1.5%)
  • 3 tablespoons instant coffee
  • 140 g butter (soft)
  • 150 g powdered sugar (- 1 cup)
  • 3 eggs (size L – preferably at room temp.)
  • 180 g wheat flour – all-purpose (- 1 cup and 2 slightly heaped tablespoons)
  • 2 teaspoons baking powder
  • 50 g ground almonds (or nuts – half a cup)

  • 150 g mascarpone cheese (- well chilled)
  • 2 tablespoons instant coffee (- dissolved in a minimal amount of water – cooled)
  • 2 tablespoons powdered sugar (- or to taste)
  • 150 ml heavy cream (- well chilled – I used 30%)

How to make creamed coffee cake

  • Heat the milk and dissolve the coffee in it – set aside to cool.
    120 ml milk, 3 tablespoons instant coffee
  • Beat the soft butter with powdered sugar for a few minutes – until the butter becomes fluffy and pale.

  • Sift the flour through a sieve with baking powder and ground almonds.
    180 g wheat flour – all-purpose, 2 teaspoons baking powder, 50 g ground almonds
  • Add one egg at a time to the butter mixture, and immediately add a tablespoon of flour – mix briefly, just until combined.

  • Add approximately half of the remaining flour alternately with the cooled coffee and mix briefly.

  • Pour in the rest of the flour and mix only until combined – stop mixing when there are still traces of flour visible on the sides.

  • Gently mix the batter with a spoon and transfer it to the prepared pan (I greased mine with butter and dusted it with breadcrumbs).

  • Bake in an oven preheated to 170 degrees Celsius (fan mode) for about 40 minutes – until a dry stick comes out clean.
  • After baking, cool the cake.

How to make coffee cream

  • Briefly mix the mascarpone cheese with coffee and powdered sugar.

  • Pour in the heavy cream and mix everything at high speed until you get a thick cream – check the sweetness of the cream and sweeten it with powdered sugar if desired.
    150 ml heavy cream

  • Spread the cream over the cooled cake.

  • Finally, you can sprinkle the top of the cake with grated chocolate.

Coffee cake with mascarpone – notes

Recently, my sister and her family came to visit for a few days, so it was fitting to bake a nice cake. And since we both like coffee, I decided to bake a coffee cake. This is how this amazing double coffee cake came about.

First, I baked a delicious coffee cake, and then I spread it with a simple coffee cream. The cake turned out simply wonderful. So super fluffy and moist, like I haven’t eaten in a long time! You absolutely must try it for yourselves.

How to make creamed coffee cake?

This is a creamed cake, and we cream soft butter with sugar. I like to use powdered sugar in such cases because it combines perfectly with butter and dissolves quickly. The butter must be soft here, so remember to take it out of the fridge beforehand!

Second thing – eggs – it’s good if they are also at room temperature. So take them out beforehand, and if you forget, hold them in hot water for at least a few minutes.

And the third thing I often mention with creamed cakes – do not mix the batter for too long after adding flour!

Otherwise, the cake may lose its fluffiness and become tough after baking, or even turn out undercooked/dense!

How to make coffee cream for cake?

I opted for a very simple and quick cream that always works. The base here is well-chilled mascarpone cheese and heavy cream. It’s best to chill them overnight. Then mixing the cream will be simple and quick. I only added two tablespoons of sugar to my cream because I don’t like overly sweet cakes. You can, of course, add more – to your taste.

Spread the cooled cake completely with the prepared cream, otherwise the cream might start to run! Finally, you can sprinkle it with grated chocolate, or even a little coffee.

How to store coffee cake with cream?

I kept my cake on a covered cake stand – outside. It stayed like that for up to three days – some last pieces. If you’re worried about the cream, you can apply it just before serving the cake. You can also store the cake in the refrigerator.

Then the butter in the cake will slightly harden, and the cake itself will be firmer. It’s worth taking it out of the refrigerator at least 30 minutes before serving, so that the cake warms up and softens nicely.

If you want children to be able to eat the cake and are concerned about coffee, you can replace it with decaffeinated coffee or cereal coffee.
