Honey-Pumpkin Cake with Raspberries – Step-by-Step Recipe
If you like moist and aromatic pumpkin cakes, then you must make this cake with added honey.

- 300 g wheat flour – all-purpose (- 2 cups)
- 2 teaspoons baking powder
- 2 teaspoons cinnamon (ground)
- 1 teaspoon baking soda
- 4 eggs (size L)
- approx. 220 g honey (3/4 cup – Nature Honey with freeze-dried raspberry from Allnutrition)
- 0.5 cup oil
- 400 g pumpkin puree (about 1.5 cups)
- 150-200 g raspberries (I used frozen)

- 250 g quark cheese (light – lean)
- 2-3 tablespoons honey (Nature Honey with raspberry – or to taste)

How to make a quick pumpkin and honey cake
- In one bowl, mix flour, baking powder, baking soda, and cinnamon.300 g wheat flour – all-purpose, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1 teaspoon baking soda
- In a second bowl, blend together pumpkin puree, oil, honey, and eggs.4 eggs, approx. 220 g honey, 0.5 cup oil, 400 g pumpkin puree
- Combine the dry ingredients with the wet ones – just mix with a spoon – if the batter is too thick, you can add a little milk.
- Pour the batter into a baking pan lined with parchment paper.
- Arrange raspberries on top of the cake – if they are frozen, you don’t need to thaw them beforehand.150-200 g raspberries
- Bake the cake at 170 degrees Celsius (fan-assisted) for approximately 35 minutes – until a skewer comes out clean.
- After baking, let the cake cool.
- Before serving, mix the quark cheese with honey and spread it over the top of the cake.250 g quark cheese, 2-3 tablespoons honey

Sugar-Free Pumpkin Cake with Honey and Raspberries – Notes
During the autumn season, pumpkin cakes are often found in my home.
I love them for their positive color and interesting taste.
This time I baked us a honey-pumpkin cake with raspberries and cream cheese on top.

How to Make Pumpkin Cake with Honey – Tips
The cake itself is one of those mixed with a spoon.
In one bowl, I mixed the dry ingredients, and in the other, the wet ingredients (including pumpkin puree).
Then I combined the wet and dry ingredients and poured the batter into the pan.
I arranged raspberries on top – I used frozen fruit here (I didn’t thaw them beforehand).
After baking, I cooled the cake, and before serving, I spread cream cheese mixed with honey on top.
You can use any honey for the cake and cream cheese.
I used honey mixed with freeze-dried raspberries from Allnutrition.
Such honey tastes deliciously like raspberries and additionally enhances the flavor of the pumpkin cake.

Which pumpkin to use to make honey-pumpkin cake?
As always, I highly recommend Hokkaido pumpkin, which has firm and less watery flesh and a strong orange color.
Instead, you can also use butternut squash.

The preparation of the pumpkin cake itself is not difficult, and you don't even need to use a mixer. The cake is so simple because it’s just mixed with a spoon :) Just prepare your pumpkin puree in advance, and then putting the cake together will literally take you a moment. Once baked, you can eat it while it's still warm — it will be wonderfully comforting and is sure to instantly boost your mood!
How Long to Bake Pumpkin Cake?
I baked my cake using the fan oven setting for about 30 minutes. Make sure to check with a toothpick to see if the cake is ready before taking it out of the oven!
