- 100 g butter (melted)

- 1 kg quark for cheesecake (good quality, preferably full-fat (see notes))
- 200 g powdered sugar (1 cup)
- approx 40 ml lemon juice (from half of a larger lemon)
- 200 g Greek yogurt

How to make lemon no-bake cheesecake step by step
Step 1 – preparations
- Prepare the lemon jellies – dissolve one packet of jelly in 200 ml of hot water and add gelatin to it – mix thoroughly and set aside.1 lemon jelly, 200 ml hot water, 1 teaspoon gelatin
- In a second bowl, prepare the second jelly according to the package instructions and set aside to cool completely and slightly set.1 lemon jelly, 500 ml hot water
- Grind or thoroughly crush the biscuits to obtain a fine powder, mix them with melted butter and press into the bottom of the prepared pan.200 g biscuits, 100 g butter
Step 2 – preparing the lemon cheesecake
- Transfer the quark, sugar, juice, and yogurt to a large bowl – blend together until the ingredients are combined.1 kg quark for cheesecake, 200 g powdered sugar, approx 40 ml lemon juice, 200 g Greek yogurt
- If the lemon jelly (the one dissolved in 200 ml) is still hot, add a spoonful of the cheesecake mixture to it and mix together.
- Pour the jelly into the rest of the cheesecake mixture and blend until combined.
- Pour the cheesecake mixture into the prepared pan and refrigerate until the mixture sets.
Step 3 – finishing the cheesecake
- After about 2 hours, the cheesecake mixture should be partially set, and if the jelly for the topping has also started to slowly set (visibly thickened), then pour it over the cheesecake.
- Return the pan with the cake to the refrigerator until it is completely set – leave the cheesecake there for at least 2 hours.

The distinct taste of lemon, delicate sweetness, and creamy quark make it hard to resist this cheesecake. What’s more, it’s simple and quick to prepare, requiring only some time to chill and set. Be sure to save this recipe and prepare it on hot summer days.

What ingredients are needed to prepare lemon cheesecake?
To make such a homemade no-bake cheesecake with lemon jelly, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- quark/curd cheese – the best will be full-fat quark for cheesecakes from a tub – I used Mój Ulubiony from Wieluń, and traditionally I also recommend Piątnica cheese; these quarks are very dense and firm. If you use a lighter and thinner consistency quark – like President, Delikate from Biedronka, or Pilos from Lidl, then omit adding Greek yogurt to the cheesecake mixture.
- Greek yogurt – I used thick Greek yogurt from Lidl sold in a large tub; you can also use thick natural skyr, or thick natural yogurt.
- lemon juice – I used juice squeezed from half a large lemon – in total it was 40 ml of juice. If you don’t have a lemon, you can use liquid “lemon essence” instead, or add lemon flavoring. You can also grate lemon zest and add it to the cheesecake.
- ladyfingers/sponge biscuits – if you don’t have ladyfingers but have some shortbread cookies, you can use them instead. For other cookies, you can add a little less butter to them – about 70-80 g, because they won’t be as dry as ladyfingers.
- gelatin – if you don’t have gelatin, dissolve the lemon jelly added to the cheesecake mixture in 150 ml of water instead of 200 ml.

Can I use a different jelly flavor?
Of course. Although lemon jelly best enhances the dessert’s flavor, you can also use lime, orange, or clear jelly.
Can fruits be added to the cheesecake?
Yes. Raspberries, blueberries, wild berries, or strawberries will work perfectly. It’s best to arrange the fruits on top of the set cheesecake and then pour the setting jelly over them.

How long does the lemon no-bake cheesecake need to chill in the fridge?
It’s best to leave the cheesecake in the fridge for at least 4–6 hours for the mixture to set properly. You’ll achieve an even better result by preparing the dessert the day before and chilling it overnight. After setting, this cheesecake will remain delicately creamy, not hard and dense.
How to store lemon no-bake cheesecake?
Store the cheesecake in the fridge – it will then retain its refreshing taste for a long time and be good to eat longer. It can also stand outside for a bit – but avoid direct sunlight and very warm places.
