The cake itself is delicious and light, perfect for warmer days. It’s a jelly cake for children, but adults will surely enjoy it too. The spinach itself is imperceptible in taste, but it gives the cake a wonderful color and moisture. I highly recommend it!

- 75 g spinach
- 2 eggs (size L)
- 60 ml oil (1/4 cup)
- 1.5 tablespoons lemon juice
- 75 g sugar (1/3 cup)
- 120 g wheat flour – all-purpose (3/4 cup)
- 1 teaspoon baking powder

- 100 g white chocolate
- 250 g mascarpone cheese

- 500 ml boiling water

How to make watermelon cake with spinach step by step
Step 1 – prepare the jelly
- Start by preparing the fruit jelly, as it will need time to set.1 package red jelly, 500 ml boiling water
- Pour the jelly into a bowl or measuring cup, add boiling water and mix thoroughly – set aside to cool, then put in the fridge to set faster.
Step 2 – prepare the spinach cake
- Transfer spinach, wet ingredients, and sugar to a blender and blend thoroughly.75 g spinach, 2 eggs, 60 ml oil, 1.5 tablespoons lemon juice, 75 g sugar
- Mix the flour with baking powder.120 g wheat flour – all-purpose, 1 teaspoon baking powder
- Add the blended wet ingredients to the flour and mix thoroughly with a spoon.
- Pour the batter into the prepared baking pan – I lined mine with baking paper.
- Bake the spinach cake in an oven preheated to 170 degrees Celsius (fan-assisted) for about 20 minutes – until a skewer comes out clean.
- Cool the cake after baking.
Step 3 – prepare the mascarpone cream
- Take the mascarpone cheese out of the fridge about an hour earlier to let it warm up slightly.250 g mascarpone cheese
- Melt the white chocolate in a bain-marie – pour a little water into the bottom of a small pot and bring it to a boil. Place a heatproof bowl (e.g., metal) on top of the pot and add the broken chocolate to it. Heat the chocolate until it melts.100 g white chocolate
- Remove the bowl with chocolate from the pot and set aside for about 10 minutes to cool.
- Add the cooled chocolate to the mascarpone cheese and blend them together on high speed until combined into a cream.
- Spread the cream over the cooled spinach cake and put it in the fridge.
Step 4 – finish the watermelon cake
- Wash and dry the blueberries.approx 100 g blueberries
- Arrange them on top of the mascarpone cream – there doesn’t have to be many, as they are meant to resemble watermelon seeds.
- Pour the slightly setting jelly over the blueberries and put the cake in the fridge for a few hours until the jelly is completely set.

My today’s watermelon spinach cake was quite popular in our internet world some time ago. I prepared it now as a cake for my sister’s arrival. We devoured it to the last crumb over the weekend. I must admit that the spinach cake combined with mascarpone and sweet jelly tasted exceptionally good to me. The cake itself is delicately lemony, moist, and at the same time slightly fluffy. It perfectly complements the white chocolate cream and fruit jelly. I think this cake will be perfect for both a weekend and special occasions. You must try this recipe!

Ingredients necessary for preparing spinach cake
To prepare this cake, you will need a few basic ingredients. Below is a shortened list of products I used and possible substitutes. All of them should be readily available in stores.
- spinach – I used frozen spinach here, which I thawed beforehand and drained the water from it. You can also use fresh spinach – just remember to blend it thoroughly.
- mascarpone – you can get mascarpone cheese in larger stores and discount stores like Lidl or Biedronka – they are always available there, so there will be no problem buying them. In Biedronka, you can often get flavored mascarpone – so pay attention to which cheese you choose :)
- white chocolate – I added 100 g of white chocolate to the cream; when buying it, pay attention to the package weight. Manufacturers often reduce the weight of chocolate, and there are packages of 90, or even 80 g. I very often buy my chocolate from the Lidl brand – it has 100 g and is of good quality.
- jelly – red jelly is essential here, as it is meant to imitate watermelon pulp – but its flavor is completely optional here – choose your favorite – strawberry, raspberry, wild strawberry, or cherry.

How to make spinach cake – tips
For the spinach cake to have a nice green color without large pieces of spinach leaves, you need to blend the spinach very well with the wet ingredients. For such cakes, finely chopped frozen spinach works best for me – it’s much easier and faster to blend. Fresh spinach leaves have a large volume and are harder to blend. A stand blender is best here, but a hand blender will also work well. You can also use a food processor – anything with small blades for finely chopping spinach will work. Once you have a relatively uniform mixture of wet ingredients, you just need to mix it with flour using a spoon – although you can also use a mixer.

How to store spinach and mascarpone cake?
It’s best to store the watermelon cake in the refrigerator. The spinach cake with blueberries and jelly itself is made with oil, so it doesn’t harden after being in the fridge and can be served immediately after taking it out. Thanks to chilling, the cake is nicely refreshing and tastes great. If necessary, it can also stand outside without worry, as it does not contain whipped cream.
