- 150 g wheat flour – all-purpose (- 1 cup)
- 30 g ground almonds (- 1/4 cup)
- 2 eggs (- size L for me)
- 500 ml almond drink
- 1 tablespoon sugar (or xylitol/erythritol)

How to make almond pancakes
- Pour flour, ground almonds, and sugar into a bowl – mix.150 g wheat flour – all-purpose, 30 g ground almonds, 1 tablespoon sugar
- Add eggs and part of the almond drink.2 eggs , 500 ml almond drink
- Mix the ingredients with a spoon, add the rest of the milk and mix thoroughly.
- Set aside the bowl with the pancake batter for about 20 minutes to “rest”. After this time, lightly mix the batter again, and if the batter is too thick, you can add a little water.
- Lightly grease the pancake pan with oil and pour in a ladleful of batter.
- Fry until the batter starts to brown at the edges, then carefully flip the pancake to the other side and fry for a little longer.
- Remove the pancake to a large plate and fry the remaining pancakes.

Almond pancakes – notes
I found the recipe for lactose-free pancake batter in Donna Hay’s book “Modern baking”.
We are a family who loves pancakes, and I practically fry some every weekend. Most often I make pancakes from Jamie Oliver’s recipe, but from time to time I feel like something new. And that’s how I decided on almond pancakes.
In the book, they are made with whole wheat flour, but I gave it up and replaced it with regular wheat flour. Besides flour, you will need ground almonds (I had unblanched almonds) and almond plant-based drink. I used a store-bought drink, but you can also make your own homemade almond milk. It’s not difficult, it just requires prior preparation of the almonds.

How to make lactose-free almond pancake batter – tips
The batter itself is very simple and quick to make – I didn’t even use a mixer here.
First, I poured the flour into a bowl and added ground almonds (if you want, you can sift them to get rid of larger almond pieces – I didn’t do that), finally I added erythritol (instead of sugar) and mixed with a spoon.
I added eggs and a little almond drink to the bowl – I mixed it. Then I gradually poured in the rest of the drink, mixing thoroughly.
Finally, I set the bowl aside for a while for the batter to rest. It’s worth letting pancake batter rest for about 20-30 minutes – then the gluten from the flour starts to work and the batter fries more easily.
As for frying the pancakes themselves…
I recommend doing this in a non-stick pan, only lightly greased with oil. These almond pancakes are a bit harder to flip than traditional milk pancakes. Therefore, it’s better to fry them longer on one side – I only flipped them when I saw they were browning. If I tried to flip them earlier, the pancake could tear. So – patience :)
Immediately after frying, the pancakes are slightly stiff – this is due to the longer frying time, but then, stacked one on top of another, they soften and become flexible.

What to serve almond pancakes with?
I opted for cottage cheese, simply mashed with a fork, mixed with natural yogurt and honey. If you’re aiming for a completely lactose-free meal, use lactose-free cottage cheese and yogurt.
Besides cottage cheese, I recommend fresh fruits – like blueberries or raspberries, as well as roasted apples and pears :)
I got 12 pancakes from this recipe – so roughly a portion for 3-4 people.
