Spinach Crepes – notes
Today I invite you to try spring, green spinach pancakes. It is thanks to the addition of blended spinach to the batter that the pancakes have such a beautiful color. And don’t worry – you won’t really taste it. My children devoured them and didn’t even stutter that they tasted different.

How to make spinach pancakes – tips
The pancake batter itself is basically standard. We add blended spinach leaves to it. You can use fresh or frozen spinach to prepare them. I used frozen – I thawed it beforehand and lightly squeezed out excess water. Blend the spinach thoroughly with milk. The better you do this, the fewer visible pieces of spinach there will be in the batter later. So it’s worth spending a little more time on it.
I recommend using a blender here. After frying, you can serve such pancakes with your favorite jams, preserves, or with sweet cottage cheese.
P.S. Spinach lovers, I encourage you to use it in cakes too – I recommend forest moss cake, strawberry delight or spinach bundt cake :)

Savory Spinach Pancakes
This spinach pancake batter is so versatile that you can eat it not only sweet. It works great in a savory version. You can use the first spring vegetables and serve pancakes with cottage cheese with added radishes and sprouts. Or maybe you prefer something more “substantial” and fill the pancakes with smoked salmon or ham? You can roll such pancakes into a roll, slice them and serve as rolls. Enjoy!

Spinach Pancake Recipe
My family loves pancakes for breakfast and I make different pancakes practically every weekend. Most often I make Jamie Oliver's pancakes, because they always turn out perfect and in the ideal quantity for me, about 10 pieces. From time to time I experiment with flavors and fry, for example, chocolate pancakes or pumpkin pancakes. And now I've made spinach pancakes. I must say that this spinach pancake batter is amazing! After frying, the pancakes have an incredibly positive green color. They look so spring-like that it makes one's heart light. See for yourselves how beautifully they look! And what's more, the spinach in the batter doesn't interfere with its taste. We even ate them served with sweet toppings.

From this pancake recipe you will get a lot of large pancakes. You can fry all the pancakes in advance and store them wrapped in cling film so they don't dry out. Serve them for breakfast, or for lunch or a snack. I found them delicious with sweet cottage cheese and jam. But spinach pancakes in a savory version are also divine! Salty cottage cheese, sprouts, sliced radishes and a delicious spring breakfast is ready. Such spinach pancakes are a delicious and healthy meal for everyone! You can roll them up with cottage cheese, a piece of salmon and cut them into rolls. These prepared spinach pancakes can be a wonderful party snack, or you can pack them in a lunch box.
