- 300 g wheat flour (2 cups)
- 50 g oat flakes (approx. ½ cup)
- 1 teaspoon baking soda
- 1 pinch salt
- 2 teaspoons coffee (instant + a little water)
- 200 g butter (soft)
- 150 g sugar
- 1 egg (size L – at room temperature)
- 1 egg yolk (from a size L egg – at room temperature)
- 200 g chocolate (dark chocolate for me – chopped)

How to make coffee cookies with chocolate
Step 1 – preparations
- Take the butter and eggs out of the fridge at least two hours beforehand.200 g butter, 1 egg , 1 egg yolk
- Brew coffee in a small amount of water – about 40 ml and let it cool.2 teaspoons coffee
- Mix together flour, baking soda, oat flakes, and salt.300 g wheat flour, 50 g oat flakes, 1 teaspoon baking soda, 1 pinch salt
- Chop the chocolate with a knife.200 g chocolate
- Turn on the oven to 170℃ (convection).
- Line two large baking sheets from the oven with parchment paper.
Step 2 – preparing the cookie dough
- Transfer butter and sugar to a bowl and mix for about 3 minutes.150 g sugar, 200 g butter
- Add coffee to the mixture and mix briefly.
- Add egg yolk and egg and mix briefly.1 egg , 1 egg yolk
- Add flour to the mixture in portions and mix on low speed – just until combined.
- Finally, add the chopped chocolate and mix with a spoon.200 g chocolate
- If the mixture is very soft, you can now put it in the fridge for about 0.5 hours.
Step 3 – preparing the cookies
- If the mixture is thick enough to form cookies, scoop large portions of dough with a spoon.
- Arrange the cookies with space between them on the baking sheet (if you wish, you can additionally roll the cookies into balls to make them more regular and then gently flatten them with the palm of your hand).
Step 4 – baking coffee cookies
- Place the tray with cookies into the preheated oven and bake for about 12-15 minutes – immediately after baking, the cookies will still be soft, do not remove them from the baking sheet until they cool down.
- If you are baking both trays of cookies at once, swap the trays after about 8-9 minutes of baking.

I baked my chocolate and coffee cookies for my daughter and her friends, because they all love homemade cookies, especially those with coffee. As a base, I used the recipe for American chocolate chip cookies. To the butter mixture, I added brewed and cooled coffee for flavor and a light color, and a lot of chopped chocolate, which, after baking, formed pieces of melting chocolate inside.
