  • 120 g flour (- I used spelt flour (less than a cup) + a little for rolling)
  • 2 heaping tablespoons pumpkin puree ( – mine was 70 g)
  • 100 g butter (softened)
  • 70 g powdered sugar (- half a cup)
  • 0.5 teaspoon gingerbread spice (or plain cinnamon)
  • 2 tablespoons cane sugar
  • 1 teaspoon cinnamon
  • milk (a little for dipping the cookies)

How to make shortbread pumpkin cookies with sugar

  • Blend together the softened butter, pumpkin puree, and powdered sugar.
    100 g butter, 70 g powdered sugar, 2 heaping tablespoons pumpkin puree
  • Mix the flour with the spice and add to the creamed butter – blend until combined.
    120 g flour , 0.5 teaspoon gingerbread spice
  • Place the dough in the refrigerator for about an hour (it can be longer).
  • Take the chilled dough out onto a floured surface and roll it out thinly – if the dough is sticky, sprinkle flour on top.
  • Cut out the cookies and place them on a baking sheet. Knead the remaining dough again, roll it out, and cut out more cookies.
  • Bake the cookies at 170 degrees (fan-assisted) for about 10 minutes – until lightly browned.
  • After baking, let them cool.
  • Pour a little milk into a small bowl.

  • Brush the cookies with milk, then sprinkle with cane sugar mixed with cinnamon.

Shortbread pumpkin cookies – notes

I just had some leftover pumpkin puree in the fridge when I spotted a recipe for these shortbread pumpkin cookies on Instagram.

I’ve made various pumpkin cookies before, but not shortbread ones yet, so I quickly used the recipe :)

You don’t need many ingredients to prepare them.

You just need butter (if you want to make a vegan version, use margarine), pumpkin puree, a little sugar, and a warming spice.

I used a pre-made pumpkin spice blend, but gingerbread spice or even just cinnamon would also work well here.

I added two generous tablespoons of puree to the cookies. Hokkaido pumpkin, for example, which has firm and less juicy flesh, would be best here.

After preparing, the dough needs to be chilled because it’s very soft and cannot be rolled out.

If you want to make it easier for yourselves, you can roll out the dough between two pieces of baking paper.

The portion isn’t large, but I still baked a whole tray of cookies.
