How to make Biscoff Muffins step by step
Step 1 – preparations
- Turn on the oven to 180℃ (top/bottom heat mode) or 170℃ (fan-forced).
- Prepare the pan with paper liners – if you have low liners, you will probably get more than 15 muffins.
- Thoroughly crush or blend the Lotus cookies.approx. 45 g Biscoff cookies
Step 2 – preparing Biscoff muffins
- In one bowl, mix the dry ingredients for the muffins.300 g wheat flour – all-purpose, 2 teaspoons baking powder, 120 g sugar
- In a second bowl, mix the wet ingredients for the muffins.360 ml Greek yogurt, 2 eggs, 120 ml oil
- Add the dry ingredients to the wet ingredients.
- Mix everything with a spoon – just until combined.
- Spoon the batter into the prepared muffin liners – up to a maximum of 2/3 full.
- Add about a teaspoon of Biscoff spread on top of each muffin.approx. 145 g Biscoff spread
- Finally, sprinkle the top of the muffins with crushed Biscoff cookies.approx. 45 g Biscoff cookies

- Place the muffins in the preheated oven and bake for about 20-25 minutes – until a toothpick comes out clean.

I baked today’s muffins some time ago for my daughter and her friends, but due to too much work, I haven’t had time to prepare the recipe for the blog until now. Now I’m catching up, and here they are! Delicious, simple, quick, fluffy muffins with sweet, slightly runny Biscoff cookie butter and crunchy Lotus cookies on top. Such muffins are not only express to prepare – and even without a mixer! – but they are also very versatile. You can eat them for a quick breakfast, a snack during the day, or a dessert with coffee. You can serve them at a barbecue or a picnic. Take them to work, or pack them for a trip – they will be perfect on the way to a holiday vacation. So be sure to save this recipe, because it will come in handy more than once!

What ingredients are needed to bake Biscoff muffins?
To make these homemade Biscoff Lotus cream muffins, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- Biscoff cream – this is a delicious cookie butter with a slightly spicy flavor, sometimes it’s hard to find in traditional stores, but it appears in Lidl, Biedronka, Dealz, Kaufland, and larger stores. I buy it as soon as it appears and keep it in stock; you can also easily buy it in online stores and on Allegro.
- Biscoff cookies – these cookies are easier to get, as they are permanently available in Biedronka and Dealz stores, as well as in other large supermarkets.
- Greek yogurt – I used thick and full-fat Greek yogurt, you can also use natural skyr, or regular thick natural yogurt.
- oil – I use rapeseed oil, but you can use any oil with a delicate flavor.

How many kcal are in 100g of Biscoff muffins?
If you get a different number of muffins than I did – e.g., due to the size of the cupcake liners or the amount of batter put into them – the final calorie count per piece will differ from what I provided under the recipe. Therefore, I also calculated the calorie content for 100g of finished muffins. And such 100g of baked muffins will have approximately 379 kcal (carbohydrates – 43.7 g, proteins – 6 g, fats – 20 g).

Frequently Asked Questions – FAQ
Can I use a different cream than Lotus Biscoff?
If you can’t find Biscoff cream anywhere, you can substitute it with another cream. Sometimes you can find Sante cookie butter, but if there are absolutely no such creams available, you can make a pistachio version and add pistachio cream and chopped pistachios to the muffins, or add a chocolate-nut cream like Nutella and top with chopped hazelnuts or crushed chocolate cookies.
Can Biscoff muffins be stored?
Yes, store them in an airtight container at room temperature for 2–3 days, or even longer if it’s not too hot and humid. You can also gently warm them before serving to make them more aromatic.
Can Biscoff cream muffins be frozen?
Yes, Lotus Biscoff cream muffins are great for freezing. Store them in the freezer for up to about 3 months.
Can I make a fit version of the muffins?
To make the muffins a bit “lighter”, you can replace sugar with erythritol.
