  • 450 g wheat flour – all-purpose (3 cups)
  • 50 g sugar (1/4 cup)
  • 160 ml milk (lukewarm)
  • 10 g fresh yeast
  • 1 teaspoon sugar
  • 2 eggs (size L)
  • 1 pinch nutmeg (optional)
  • 50 g butter ( soft)

  • 3 apples (mine weighed about 450 g)
  • 2 tablespoons brown sugar

How to make yeast dough for Apfelkuchen cake

  • Crumble the yeast into lukewarm milk, add a teaspoon of sugar and mix. Cover the starter and set aside for about 15 minutes to activate.
    10 g fresh yeast, 1 teaspoon sugar, 160 ml milk
  • Meanwhile, pour flour into a large bowl, add eggs, the rest of the sugar, soft butter, and nutmeg (you can use cinnamon instead).
    450 g wheat flour – all-purpose, 50 g sugar, 2 eggs, 50 g butter, 1 pinch nutmeg
  • Pour in the yeast starter and knead the dough.
  • Cover the bowl with the dough with a towel and set aside for about an hour to rise.
  • Briefly knead the risen dough again and spread it into the prepared baking pan (lined with baking paper). Stretch the dough over the entire surface – it will be quite thin.
  • Cover the pan with a towel and set aside for about 15 minutes.
  • Turn on the oven to 200 degrees Celsius – top-bottom heat mode.
  • Meanwhile, peel the apples, remove the core, and cut them into small cubes.

  • Mix the egg with sour cream and brush over the top of the dough.

  • Place the apples on top.
  • Sprinkle the apples with brown sugar and a little cinnamon and almond flakes.

  • Bake for 15 minutes, then reduce the temperature to 180 degrees Celsius and bake for another 15 minutes – until the cake is golden brown.
  • After baking, let it cool slightly and serve while still warm :)
Uwagi
If the apples are not very sweet, you can additionally drizzle the cake with a little icing. Just mix half a cup of powdered sugar with 1-3 tablespoons of milk. Add milk one tablespoon at a time and mix.

Yeast Flat Cake with Apples – Notes

I found the recipe for this Apfelkuchen flat cake in Nigella Lawson’s book “How to Be a Domestic Goddess”.

And since I am a fan of yeast cakes, I quickly decided to try it.

I changed the recipe a little and adapted it to my taste.

The cake turned out very tasty, so I’m sharing the recipe with you too.

Literally translating Apfelkuchen, it’s simply an apple flat cake originating from Germany.

A simple and tasty yeast flat cake with apples with a hint of warm spices.

You can prepare the yeast cake in the evening and store it in the refrigerator.

In the morning, just take it out, wait for it to warm up, and bake it for breakfast.

As usual, I used fresh yeast for the cake, but you can also use dried yeast – half a packet is enough.

You can use any apples; 3 medium ones should be enough for the whole flat cake.

The Apfelkuchen flat cake tastes delicious while still warm, but it’s equally tasty after cooling down.

If you like sweeter cakes, you can additionally drizzle a little icing on top of the cake.
