If you have egg yolks in the fridge and don’t know what to do with them, I recommend this very quick and simple cake with added grated apple.

- 200 g powdered sugar (1⅓ cups)
- 225 g wheat flour – all-purpose (1½ cups)
- 2 teaspoons baking powder
- 0.5 teaspoons cinnamon
- approx. 200 g apple (grated on a coarse grater)
- 60 ml milk

How to make egg yolk cake with apple step by step
Step 1 – preparations
- Grease the baking pan with butter and sprinkle with flour, or line with baking paper.
- Combine flour, baking powder, and cinnamon – you can sift them through a sieve.225 g wheat flour – all-purpose, 2 teaspoons baking powder, 0.5 teaspoons cinnamon
- Grate the apple on a coarse grater – you can peel it or not :)approx. 200 g apple
- Preheat the oven to 180℃ (top/bottom heat) or 170℃ (fan-assisted).
Step 2 – preparing the batter
- Place egg yolks and sugar in a large bowl.6 egg yolks, 200 g powdered sugar
- Mix together on high speed with a mixer until the mixture becomes fluffy and light in color.
- Add milk to the bowl and briefly mix on low speed.60 ml milk
- Add flour in portions and briefly mix – just until combined.
- Add the apple to the bowl and mix with a spoon.
- Transfer the batter to the prepared pan.
Step 3 – baking the cake
- Place the pan in the preheated oven and bake for about 35-40 minutes – until a toothpick comes out clean.
- Before serving, you can additionally sprinkle the cake with powdered sugar.

Why bake this egg yolk cake?
My son recently had a birthday and as a “cake” he asked for Pavlova with cherry fruit filling. This way I was left with 6 egg yolks, which I had to do something with so they wouldn’t go to waste. And so this very quick and simple cake came into being. There is no additional fat in it other than that contained in the egg yolks, and the grated apple makes the cake moist and prevents it from drying out. This cake can easily last even a week and will be great to eat. Save this recipe for later when you need an idea for using up excess egg yolks :)

What ingredients are needed to bake an egg yolk cake?
To make such a cake at home, you will only need a few basic ingredients that you either already have or can easily get in any store. Below is a shortened list of products I used and possible substitutes.
egg yolks – I used 6 egg yolks from size L eggs – they weighed about 110 g, you can use egg yolks from eggs of a different size – if you have a scale, you can weigh them, if you use a little less or a little more, it will not significantly affect the cake
sugar – I mixed my egg yolks with powdered sugar to make it quicker, but you can use regular granulated sugar, or xylitol or erythritol – use 200 g of those too – but if you measure ingredients with a cup, it will only be 1 full cup!
milk – you can use any milk, including plant-based milk

Which apples are best for this cake?
It’s best to choose slightly sour and juicy apples, e.g., Grey Reinette, Ligol, or Antonovka. Thanks to them, the cake will have a more distinct flavor. But of course, use the apples you have at home. I used one very large apple and peeled it beforehand – I provided the weight of such a peeled and grated apple.
Can other fruits be added to the cake?
Yes, you can replace the apple with grated pear, for example.

What to do with the egg whites left over after preparing the cake?
Did you make this cake and have egg whites left over? Use them to bake meringues or meringue cookies, you can also make kokosanki – which are cookies made from egg whites and coconut flakes, or fry an egg white omelet :)
How to store apple cake?
After baking and completely cooling, transfer the cake to an airtight container with a lid to keep it fresh for as long as possible. At room temperature, the cake can last about 3 days (if it’s not too hot and humid); if you want the cake to last longer, it’s worth storing it in the refrigerator. You can also freeze the cake for about 3 months.
