How to make a perfect meringue?

Meringue is a dessert that might seem difficult to prepare, but in reality, it can be easily made at home, and the final result will surely delight you. Here are some tips on how to prepare a perfect meringue:

  1. Ingredients: To prepare a basic meringue, you only need a few ingredients – first and foremost, egg whites, sugar (preferably fine), and a touch of vinegar or lemon juice. I also usually add a little potato starch for slight stabilization of the egg white foam.
  2. Equipment: Before preparing meringues, it’s worth gathering all the necessary tools. You’ll need a bowl to whisk the egg whites, a mixer or food processor, and a baking sheet. It’s important that the bowl and mixer attachments are clean – free of any grease! Egg whites won’t whisk properly if they come into contact with fat.
  3. Whisking egg whites: To achieve a perfect meringue, egg whites must be whisked very thoroughly. It’s best to whisk them together with sugar at high speed until the mixture is stiff and glossy. You can add a pinch of salt to facilitate the whisking process.
  4. Adding sugar: Add sugar gradually, one tablespoon at a time, continuously whisking the mixture. This way, the sugar is slowly incorporated into the egg whites. Remember not to add too much sugar at once, as this can cause the mixture to become runny.
  5. Consistency: The finished meringue mixture can be tested by scooping a spoonful and turning it upside down. If the mixture doesn’t fall and remains stiff, it means it’s ready to be shaped.
  6. Baking: Bake the meringue on a baking sheet lined with parchment paper at 100-120 degrees Celsius for about 1-2 hours, depending on the size and thickness of the meringue. It’s best to bake it in convection mode – this way, the meringue dries faster and better. A finished meringue should be crispy on the outside, but soft and creamy on the inside. Smaller meringues (bite-sized) are, of course, baked for a shorter time – they are usually entirely crispy – without a soft interior.
  7. My secret meringue baking trick :) – due to convection baking, parchment paper can lift and stick to the meringue. To avoid this, I always spread a little meringue on the underside of the paper’s corners and stick it to the baking sheet. The paper definitely won’t lift then :)

Remember that every oven is different, so baking times for meringues may vary. It’s important to bake meringues slowly, avoiding high temperatures, as otherwise, they may crack. It’s a baked good with a delicious taste that will surely delight everyone. You can prepare it in a very sophisticated and festive version, or a very simple, almost rustic one. Such a large meringue with cream and fruits is my children’s favorite meringue, and they can never resist it. Meringue with Strawberries and Whipped Cream

This recipe for meringue with strawberries is one of the oldest recipes for this delicious cake on my blog. The meringue itself is tall, with a soft, almost creamy center and crispy sides. Meringue tarts are delicious cakes where the cake layers are replaced with meringue discs. Here, you usually bake about 2-3 lower and flatter meringues, and then layer them with cream, similar to a cake. Such meringue cakes can also be layered with various fruits, creams, or other additions like chopped chocolate, nuts, or other dried fruits. Meringue cakes are a great idea for a birthday cake – especially if you don’t trust your decorating skills :) Here, it’s enough to arrange some fresh fruits on top, and a delicious cake is ready :) You must try it!

This coffee-caramel meringue cake is a great cake for adults. The sweetness of the meringues pairs perfectly with the distinct coffee-chocolate cream and the sweeter dulce de leche cream. The “cherry on top” here are the cherries :) You can also use other fruits here – raspberries or cherries, for example, would work well.

Dacquoise Meringue Cake

I have a feeling I don’t need to introduce you to this dacquoise cake. It originally comes from France and has found many admirers in Poland. In the Polonized version, you might encounter the name “beza dakłas”. This is probably the sweetest meringue I’ve ever eaten. But it’s no wonder, with sweet dates and caramel added, plus crunchy nuts. Everyone should try a dacquoise meringue at least once, so be sure to prepare it!

Delicious Meringues for Dessert

Of course, you can prepare and serve meringues not only for holidays and special occasions! They will work perfectly as a delicious dessert after dinner, or an accompaniment to aromatic coffee. Smaller meringues – ideal for a few bites – will be perfect here. You can bake such mini meringues in advance and store them in an airtight container. Then, when needed, you take them out, add cream and your favorite toppings, and a delicious meringue dessert is ready. Here, I’ll give you three recipes for delicious mini meringues with various toppings, as well as a delicious meringue roll.

Rocher Meringues

Rocher Meringues are delicious homemade meringues with chocolate cream and hazelnuts. I made the chocolate cream with a generous amount of dark chocolate and cream, giving it an intense chocolate flavor. I decorated the top with a sprinkle of crushed nuts, which gave them a taste and appearance similar to Rocher pralines – I highly recommend them!

Salted Caramel Meringues

Salted Caramel Meringues are delicious mini meringues whose tops are drizzled with caramel and a touch of salt. This sweet and salty combination tastes absolutely perfect, and the meringues look beautiful (you can see a photo of these meringues at the top of the post). Serve them with whipped cream and fresh fruits, and they will taste delicious!

Dalgona Coffee Meringues are inspired by the famous Dalgona coffee. Here we have small sweet meringues, a light cream, and whipped Dalgona coffee on top. This is a real treat for coffee and sweet dessert lovers. You must try them!

Meringue Roll with Currants and Blackberries

Meringue roll with blackberries is an excellent idea for a summer dessert. The meringue roll itself is, in my opinion, easier to make than a traditional roll, because it’s much easier to roll up than one made from sponge cake. If you haven’t made a meringue roll yet, you absolutely must catch up! Here I recommend a roll with fruits, but on the blog you will also find a recipe for a meringue roll with chocolate cream, or a nut meringue roll – bake them all!
