Prepare with me today an exquisite apple cake from an old recipe book. This butter apple cake turns out incredibly fluffy and light. Simple in taste, but precisely because of this simplicity, it is in a way elegant and exquisite. The cake does not dry out and still tastes delicious even after a few days. You must try it. - 125 g butter (soft)
- 125 g powdered sugar (- scant cup)
- 3 egg yolks (- I used size L eggs)
- 3 egg whites
- 200 g wheat flour – all-purpose (- 1 and 1/3 cups)
- 2 teaspoons baking powder
- about 3 tablespoons milk
- 2 large apples

How to make fluffy apple cake
- Peel the apples, cut them into quarters, remove the core, and slice the fruit.2 large apples
- Cream the butter with powdered sugar until fluffy and pale.125 g butter, 125 g powdered sugar
- It’s best to sift the flour through a sieve together with the baking powder.200 g wheat flour – all-purpose, 2 teaspoons baking powder
- Add the egg yolks one by one to the butter mixture, mixing briefly after each addition.3 egg yolks
- Add the flour along with the milk to the mixture – mix on low speed and only until the flour is combined – do not overmix.about 3 tablespoons milk
- Beat the egg whites until stiff peaks form.3 egg whites
- Add the egg whites to the batter and gently fold with a spatula.
- Transfer the batter to the prepared pan (greased with butter and dusted with breadcrumbs), arrange apple slices on top, lightly pressing them into the batter.
- Bake in an oven preheated to 180 degrees Celsius (top/bottom heat) for about 50-60 minutes – until a toothpick comes out clean.
- After baking, cool the apple cake, and before serving, sprinkle with powdered sugar.

Some time ago, I received a very old cake recipe book from my mother-in-law.
The book is essentially a collection of loose, yellowed pages, without a cover and with missing pages.
I found very interesting, and sometimes even surprising recipes in it – such as a recipe for cookies made from milk skins – I don’t even know if I would dare to make them. Childhood trauma is probably too strong to try it ;)
Besides such recipes, there are many very simple ones that at the same time have “that something”.
And this is precisely the recipe for butter apple cake.
In the book, it is described as an exquisite apple pie.
It’s hard to call such a simple apple cake exquisite, but when I baked it and saw it, I concluded that it actually has something elegant about it. Such effortless simplicity and lightness make the cake look beautiful.
What’s more, it tastes excellent and retains its freshness and fluffiness for a long time – you must try it and see for yourselves.

How to make an exquisite apple cake – tips
This cake is a creamed butter cake.
What does it mean that the cake is creamed? It means that either eggs with sugar are creamed into a fluffy mass (as in sponges) or butter with sugar. In this case, our apple cake is creamed with butter.
Therefore, you will need soft butter here, which you cream with sugar. I used powdered sugar here because I prefer to use it in creamed cakes. You can, of course, use granulated sugar, but then remember to cream the butter with sugar until it dissolves and the butter mixture is smooth.
It’s worth sifting the wheat flour through a sieve together with baking powder – then it will be better aerated and the cake will be fluffier.
When adding flour to the butter mixture, mix it on low speed and briefly – just until combined. I even recommend turning off the mixer when there are still traces of flour and mixing it in with a spoon. Mixing flour with butter for too long can make the cake tougher and may even result in a soggy bottom.
In this apple cake, we separate the eggs into yolks and whites and add them separately. The whites should be beaten until stiff. Then you add them to the finished batter and gently mix with a spatula.
The egg white foam adds more fluffiness and lightness to the cake.
The batter is thick, so the fruit does not sink during baking. I sliced them and arranged them on top of the cake, gently pressing them into the batter.
Instead of apples, you can also use other fruits – pear, peaches, or plums (these should be arranged skin-side down) would work well here.
