  • 2 egg yolks
  • 50 g sugar (1/4 cup)
  • 50 g wheat flour – all-purpose (1/3 cup)
  • 1 tablespoon potato starch

  • 250 g mascarpone cheese
  • 50 g white chocolate

apple layer ingredients

  • 1 jar Helcom stewed apples (790 g)
  • 1 package jelly (light – I used colorless)
  • 200 ml boiling water

whipped cream ingredients

  • 250 ml heavy cream (well chilled)
  • 2-3 tablespoons powdered sugar (or to taste)

How to make apple pie with cream step by step

    Step 1 – prepare the sponge cake

    • Sift both flours through a sieve.

    • Whisk the egg whites with sugar into a white, thick, and fluffy mass – I whisk them together at high speed for several minutes.

    • Add the egg yolks to the beaten egg whites and either mix on the lowest speed of the mixer (just until combined), or gently stir with a spoon.

    • Pour in the sifted flours and gently mix or stir.

    • Line the bottom of the baking pan with parchment paper.
    • Transfer the batter to the pan and smooth the surface.

    • Bake the sponge cake in an oven preheated to 170 degrees (convection) or 180 degrees (top/bottom mode) for about 10 minutes – until a dry skewer comes out clean.
    • After baking, cool the sponge cake.

    Step 2 – prepare the mascarpone cream

    • Melt the white chocolate in a bain-marie – pour some water into the bottom of a saucepan and bring it to a boil. Place a metal or heatproof bowl on top and add the broken chocolate to it. Heat the chocolate until it melts.

    • Remove the bowl with chocolate from the saucepan and set aside for about 10 minutes to cool.
    • Transfer the mascarpone cheese to a mixing bowl.

    • Add the cooled chocolate and mix together – until combined.

    • Spread the cream over the sponge cake (you can lightly soak it beforehand with sugar water or weak tea) and smooth it out.

    • Place the cake pan in the refrigerator.

    Step 3 – prepare the apple filling

    • Transfer the apples to a bowl.

    • Dissolve the jelly in boiling water and mix thoroughly.

    • Add a spoonful of apples to the dissolved, hot jelly and mix.

    • Pour the jelly into the rest of the apples and mix together.

    • Transfer the apples to the cake pan.

    • Refrigerate for at least 4 hours – so that the apples set.

    Step 4 – prepare the whipped cream

    • Whisk the cold heavy cream together with powdered sugar into a thick whipped cream – I whisk for several minutes at the highest speed of the mixer.

    • Spread the prepared whipped cream over the apples and smooth it out.

    • If you wish, you can make decorative grooves on the whipped cream – you can also playfully swirl it with a spoon.

    • Finally, put some cinnamon into a fine sieve and sprinkle it over the apple pie.

    • Store the cake in the refrigerator.

    Apple pie with whipped cream and mascarpone cheese – notes

    I prepared today’s cake with delicious roasted apples from Helcom. And all this as part of the campaign “Life has taste”. On the campaign website, we can read that “the aim of the campaign is to record memories in the form of culinary recipes. Because our memories have taste and smell! Important and inspiring moments are often accompanied by food. From travels, we most eagerly bring back new flavors to share them with loved ones. For many people, tasting life begins with culinary journeys and experiments. The kitchen is a place that mixes emotions. It makes them grow like yeast!”

    I’m adding my small contribution to the campaign and invite you to a delicious apple pie on a sponge cake with jelly and whipped cream – because apple pies are one of my favorite cakes. I usually bake crumbly apple pies, but today I opted for a more elegant and modern version of the cake. If you also love apple cakes, then you must try this recipe!

    Apple pie vs. Charlotte – what is the difference here, in principle? Well, generally speaking, apple pie, as the name suggests, is made with apples. Charlotte, on the other hand, can be made with various fruits – for example, it can be a Charlotte with pears, or with raspberries. But also, of course, with apples :)

    What ingredients are needed to prepare apple pie?

    To prepare this cake, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.

    • apples – obviously, apples are the base of this cake; I used roasted apples from Helcom here – for the recipe, you need one large jar with a capacity of 790g
    • jelly – to make the apple mixture firm, you need to add jelly to it – I used a crystalline, colorless one; you can also use another one, but in a light color – e.g., lemon, peach, orange, or gooseberry – remember to dissolve it in less water.
    • whipping cream – for the top layer, I used whipping cream in a carton with 36% fat content – I wanted it to be more stable; you can also use 30% cream
    • mascarpone – you can buy this cheese in larger stores and discount stores; alternatively, you can substitute it with full-fat quark for cheesecakes (the kind from a tub)

    Can apple pie be made without baking?

    If you don’t have a way to bake a sponge cake, or you have little time, you can make this apple pie without baking. Simply arrange ladyfingers in the mold instead of a sponge cake. You can use both traditional round ladyfingers and elongated ones like for tiramisu. You can also lightly soak the ladyfingers with water sweetened with sugar.

    How many calories does mascarpone apple pie have?

    In the table next to the recipe, I stated that 100 g of this apple cake has about 200 kcal. If you cut your creamy apple pie into 12 roughly equal portions, each of them will have about 323 kcal (carbohydrates – 35 g, fat – 18 g, protein – 4 g). Of course, this calorie count is calculated for the products I used. For example, if you use 30% cream, the calorie count will be slightly lower.
