I invite you to try these delicious and very simple apple cupcakes. Such apple cupcakes are quick to make, and after baking, they are moist and stay fresh for a long time. You can bake these apple muffins in the morning and serve them for a sweet breakfast. And what’s left, eat later for dessert with coffee or tea. Apple cupcakes will appeal to both children and adults. I highly recommend them!

Roasted Apple Muffins – Step-by-Step Recipe
Bake with me today these amazing roasted apple cupcakes, which are wonderfully moist and stay fresh for a long time.

- 300 g apples (about 2 pieces)
- 50 g sugar (1/4 cup – or to taste)
- 1 teaspoon cinnamon
- water (a little)

- 275 g wheat flour – all-purpose (scant 2 cups)
- 2 teaspoons baking powder
- 100 g sugar (half a cup)
- 75 g butter (softened)
- 2 eggs (size L – at room temperature)
- 125 ml milk (slightly lukewarm)

How to make roasted apples for muffins
- Peel the apples, cut them into quarters, remove the core.300 g apples
- Cut the apples into small cubes and transfer them to a saucepan.
- Add 1-2 tablespoons of water, sugar, and cinnamon.1 teaspoon cinnamon, water, 50 g sugar
- Heat until the fruit softens slightly – but not too long – so they don’t fall apart.
- Cool the apples.
How to make muffin batter
- Add flour, sugar, and baking powder to a large bowl.275 g wheat flour – all-purpose, 100 g sugar, 2 teaspoons baking powder
- Briefly mix the butter with the eggs.75 g butter, 2 eggs
- Add some flour and milk – mix.125 ml milk
- Add the rest of the dry ingredients and mix briefly – just until combined.
- Spoon a tablespoon of batter into the muffin molds.
- On top, arrange about a teaspoon of apples (without the liquid that formed during heating).
- Spoon the rest of the batter, and then the remaining apples on top.
- If you wish, you can additionally sprinkle the top of the muffins with cinnamon sugar – just mix 2 tablespoons of sugar with 1/4 teaspoon of ground cinnamon).
- Bake the muffins at 200 degrees (top/bottom heat mode) for about 20-25 minutes – until a dry skewer comes out clean.
- After baking, cool the muffins.
- You can store them for several days in an airtight container.

Simple Roasted Apple Muffins – Notes
I found this apple muffin recipe in Eric Lanlard’s book “Home Bake”, but it had to wait a bit for its turn.
Recently, I browsed through the book again, and then they really spoke to me, so I baked them :)
I slightly modified the recipe, or rather, I omitted a few ingredients.
Eric Lanlard added calvados for roasting the apples – I didn’t have any, so I skipped it.
He also added chopped toffee candies to the muffins themselves; I omitted them to avoid adding unnecessary calories to the cupcakes.
The roasted apple cupcakes turned out delicious and stayed fresh for a long time.
I packed them in a container with a lid and took them on vacation.
Even after a few days, the cupcakes were soft and moist.

How to Make Apple Cupcakes – Tips
Start by preparing the apples.
Use firm fruits here, so that after heating they don’t turn into a puree, but retain their shape.
Cut the apples into small cubes and heat with sugar and cinnamon – if you have it, you can add 2 teaspoons of calvados.
Once the apples soften, cool them and prepare the cupcake batter.
Here, Eric Lanlard prepared the batter in an unusual way, and I followed his instructions – but you can choose a more traditional method.
He blended butter with eggs and then with milk.
He then added dry ingredients to this mixture.
You can make the cupcake batter this way, or first cream butter with sugar, then add eggs and flour with milk.
In both cases, do not mix the batter for too long after adding the flour – just until the ingredients are combined.
Spoon the prepared batter into the cupcake liners and place some of the apples on top.
Cover with the remaining batter – there won’t be much, but enough.
Add the rest of the apples and bake.
It’s best to add the apples to the muffins without any juice they might have released, so as not to thin out the batter.
You can also sprinkle the cupcakes with brown sugar or cinnamon sugar before baking.
You can also add a few finely chopped toffees to the batter :)
