How to make Biscoff Brownie
- Break the chocolate into pieces and melt it together with the butter – mix thoroughly.200 g dark chocolate, 150 g butter
- Add sugar to the mixed chocolate and stir with a spoon.100 g sugar
- Add eggs one by one and mix the chocolate mixture thoroughly after each addition.3 eggs
- Sift the flour and dark cocoa directly into the bowl with the chocolate mixture.120 g wheat flour – all-purpose, 30 g dark cocoa
- Mix the batter with a spatula.
- Transfer the batter to the prepared pan, approximately 22/22 cm – I lined mine with baking paper.
- Briefly heat the Biscoff spread (e.g., in the microwave) until it becomes liquid and pour it over the brownie.approx 70 g Biscoff spread
- Gently swirl the brownie with the spread using a teaspoon to create “swirls”.
- Sprinkle the top of the brownie with lightly broken Lotus cookies.approx 6-7 pieces Lotus cookies
- Bake the brownie in an oven preheated to 180 degrees Celsius (top and bottom heat mode) for about 30-40 minutes.
- After baking, let the brownie cool and cut it into pieces.

Brownie with Biscoff Cream – Notes
I recently baked us such a simple yet delicious brownie cake, and it was practically gone within a day. My son especially liked the cake, and he ate most of it himself. What kind of cake is Biscoff Brownie? It’s a double chocolate brownie cake made with both chocolate and bitter cocoa. Plus, sweet Biscoff cookie cream and crunchy Lotus cookies. Together, this creates a wonderful combination of flavors.

Ingredients for Brownie with Lotus Cookies
To prepare this brownie, you will need a few basic ingredients that you can easily find in any store or already have at home. Besides these, you will need Biscoff cream and Lotus cookies. Below is a list of the basic ingredients.
- dark chocolate – the base of the brownie is dark chocolate. In the recipe, I used 200g of chocolate, but I know that recently chocolate manufacturers like to reduce the weight of chocolate to 90 or even 80g. If you have 90g chocolate, use it; there will be a little less, but it won’t harm the brownie.
- cocoa – in addition to chocolate, I also added cocoa to the brownie – it should be bitter cocoa – it can be regular or defatted. It cannot be sweetened cocoa powder drink.
- butter – use butter with about 82% fat content, you can also make the brownie with coconut oil, or with lactose-free butter if you are lactose intolerant.
- sugar – despite the brownie having a lot of dark chocolate and bitter cocoa, I only added half a cup of sugar to it. I didn’t want to make the brownie too sweet, as the cookies and cream add a lot of sweetness. You can, of course, use more sugar if you like very sweet cakes.
- Lotus cookies – these are popular Belgian cookies with exceptional crispiness and a slightly spiced and cinnamon flavor. You can easily find these cookies in Biedronka or Dealz stores. They can also be bought, for example, on Allegro.
- Biscoff cream – this cream is made from crushed Lotus cookies. Buying it is a bit more problematic because stores don’t have it in regular stock. Sometimes it appears in Dealz; I bought mine on Allegro – I took two packages at once. You can make this cream and cookies yourself – see my recipe for speculoos cookies and cookie cream (very similar in taste).

Preparing Brownie with Biscoff Cream – Tips and Tricks
Preparing this brownie is extremely simple and quick. You won’t even need a mixer here, as the entire cake can be prepared using only a spoon or spatula and mixing the ingredients in a bowl. Remember to take the eggs out of the refrigerator beforehand so they can warm up. What if you forget to take out the eggs? It’s not a problem. Transfer them to a bowl and pour hot water over them. Keep the eggs in the water for a few minutes, and they will warm up. Also, heat the Biscoff cream to make it liquid. I transferred it to a small bowl and heated it for about 30 seconds in the microwave.

How to melt butter and chocolate for brownie?
You can melt butter and chocolate in two ways. I transferred my butter to a larger bowl and added broken chocolate. I placed the bowl in the microwave and heated it in 30-second intervals – after each, I gently stirred the mixture. In total, it took me 1.5 minutes to melt the chocolate. What if you don’t have a microwave? Then transfer the butter to a saucepan and melt it alone. Then add the broken chocolate, wait a few minutes for the chocolate to soften, and then mix thoroughly. Start adding the remaining ingredients to the melted and mixed chocolate with butter.
Brownie baking time and temperature
Transfer the brownie batter to a baking pan approximately 22 by 22 cm (it’s best to line the pan with parchment paper, or grease it with butter and sprinkle with flour or breadcrumbs). Place the pan with the cake in an oven preheated to 180 degrees Celsius (top and bottom heat mode) and bake for about 35 minutes. You can also bake the cake in convection mode – then reduce the temperature by 10 degrees. The baking time remains similar.

Different brownie variants with cookies
You can prepare this brownie cake in various flavors. Use the basic brownie cake recipe here, and change the toppings to achieve a different taste. If you don’t have Biscoff cookie cream, you can use chocolate-nut cream (e.g., Nutella) instead. Peanut butter would also work well here (then you can add more sugar to the brownie, as peanut butter is unsweetened), or homemade caramel sauce. Additionally, during the Christmas season, Lidl offers their cookie cream – it’s delicious and will perfectly replace Biscoff cream.
What to substitute for Lotus cookies in brownie?
You can replace Lotus cookies with similar-tasting speculoos cookies – they are usually widely available during the pre-holiday season. You can also give this brownie a more festive character by using crunchier gingerbread cookies. In that case, you can add a teaspoon of gingerbread spice to the brownie batter itself to enhance the gingerbread flavor.

How to store Biscoff Brownie?
This brownie cake does not need to be stored in the refrigerator. It will do great at room temperature. I recommend storing the cake in an airtight container, or covering the pan with the cake with plastic wrap or a cake dome. This will prevent the cake from drying out excessively.

Can Lotus cookie brownie be frozen?
Yes, brownie cake can be frozen. Simply wrap it in plastic wrap (after it has completely cooled) and you can store it in the freezer. It can stay there for about 3 months.
