Dulce de leche cupcakes with cream – notes
It’s been a while since I baked cupcakes at home, and I’ve been wanting to make some. I once came across these very caramel cupcakes filled with dulce de leche cream and finally served with whipped cream. I decided this was it! I dug out a can of dulce de leche, baked sponge cupcakes, and here they are!
They look like a million dollars, taste even better, and actually – they’re not that high in calories at all :) This is thanks to the sponge cupcakes, which are low in calories themselves.
How to make whipped cream for cupcakes?
Of course, we need whipping cream. I prefer to use 30% liquid cream. I never have a problem whipping it. You just need to remember that the cream should be well chilled before whipping. If it’s very warm at home, I also chill the bowl and the whisk attachment from the mixer. I whip the cream at high speed, and while doing so, I add powdered sugar. If the cream needs to be more stable (thicker), I add cold mascarpone cheese to it. This prepared whipped cream has never failed me! You can transfer it to a piping bag with a nozzle and decorate cupcakes or muffins with the cream. These cupcakes will be perfect for any special occasion – they can even replace a cake.
