Creamed chocolate cake with plums – notes
Recently, taking advantage of the abundance of Polish plums, I baked such a delicious chocolate cake for my family.
This is a creamed cake, so I blended soft butter with sugar into a fluffy and very light mixture, and only then did I start adding other ingredients to it.

What ingredients are needed for chocolate cake?
- butter – we use extra butter here – 82% fat, and the butter must be soft, at room temperature. Therefore, it’s worth taking it out of the fridge beforehand.
- chocolate – for a strong chocolate flavor, I recommend good quality dark chocolate here
- sugar – I like to prepare creamed cakes with powdered sugar; butter whips better with it and has a better texture
- cocoa – in addition to chocolate, I added some bitter cocoa to the cake for an even more intense flavor
- plums – you can use any plums here, cut larger ones into smaller pieces so they are not too heavy
- heavy cream – for the chocolate sauce, you will need heavy cream; I used 30% liquid cream here

How to make creamed chocolate cake fluffy?
For the creamed cake to be fluffy and light after baking, you need to pay attention to a few elements.
Firstly – creaming the butter – cream the butter for a long time – until the sugar dissolves well, and the butter mixture visibly increases in volume and takes on a pale, light color. You can beat the butter for up to 10 minutes. When using powdered sugar, the butter whips faster.
Secondly – it’s good to sift the flour, baking powder, and bitter cocoa through a sieve. This will aerate it and make it lighter when added to the butter.
Thirdly – when adding flour to the creamed butter, mix it on low speed and briefly – just until the ingredients are combined.
Fourthly – egg white foam. In this creamed cake, I whipped the egg whites into a stiff foam and added them to the batter in two portions. Mix the foam into the batter gently with a spoon. Egg white foam adds extra fluffiness and lightness to the creamed cake.
Fifthly – do not open the oven after placing the cake inside until the baking time is complete. Only towards the end of baking can you check with a skewer whether the cake is baked or needs a little more time.

What to substitute plums with in chocolate cake?
If you don’t like plums, or don’t have them, you can use other fruits. Pears – sliced, or raspberries, or blueberries would work great here. You can also use compote fruits or canned fruits.
Regardless of the fruits used, this chocolate cake with chocolate sauce will taste amazing!
