- 200 g wheat flour – all-purpose (- 1 and 1/3 cups)
- 25 g bitter cocoa (- 2 slightly heaped tablespoons)
- 50 g powdered sugar (- 1/3 cup)
- 1 teaspoon cinnamon (- optional)
- 120 g butter
- 1 egg (- size L)
- cold water (- optional – to bind the dough)
- approx 150 g chocolate-nut cream (e.g. Nutella)

How to make chocolate cookies with chocolate cream
- Knead the dough from flour, cocoa, sugar, egg, butter, and cinnamon – I mix everything together in a food processor.200 g wheat flour – all-purpose, 25 g bitter cocoa, 50 g powdered sugar, 1 teaspoon cinnamon, 120 g butter, 1 egg
- If the dough doesn’t stick together well, you can add a little cold water and knead the dough.cold water
- Wrap the finished dough in cling film and refrigerate for about 30-60 minutes.
- After this time, take the dough out of the fridge and knead it lightly.
- Sprinkle the kitchen counter with flour and roll out the dough to a thickness of about 5 mm.
- If you want to use a patterned rolling pin, lightly sprinkle the top of the rolled-out dough with flour.
- Roll the dough with the patterned rolling pin, pressing it down so that the pattern is imprinted.
- Cut out circles with a round cookie cutter (or e.g. a glass) – in every second cookie, you can additionally cut out a smaller circle – then the cream will look nice through it.
- Arrange the cookies on a large baking sheet lined with baking paper (for me, the cookies took up two large baking sheets) – you can also gently brush off excess flour from the top of the cookies with a brush.
- If you have a balcony and it’s cold, you can cover the baking sheets with cookies with foil and put them on the balcony for about an hour. If not, you can bake them immediately.
- Bake the chocolate cookies in an oven preheated to 170 degrees (fan-assisted) for about 12 minutes.
- After baking, cool the cookies.
- Spread chocolate cream on one cookie and stick another cookie on top.approx 150 g chocolate-nut cream

Christmas marquise cookies with chocolate – notes
I don’t know about you, but for me, cookies are a must during the holidays. I usually make the most aromatic gingerbread cookies, which we fancifully decorate with colorful icings together with the children. But I always bake a few other cookie flavors too, because I like to have a choice. And since we also take these cookies to grandmas, no amount of cookies is too much.
Now I’ve baked us these delicious chocolate marquise cookies, which I filled with chocolate-nut cream. The cookies themselves are super simple to make, and they look wonderful thanks to the decorative festive pattern. This pattern is thanks to a special wooden rolling pin with an engraved design. I once bought two such rolling pins from China and I must say it was a disaster. The pattern was so thinly engraved that it was practically invisible after baking. This taught me that such rolling pins must be of good quality.

Essential ingredients for chocolate cookies
To prepare the cookie dough, you will only need a few basic ingredients, most, or maybe even all, of which you may already have at home. And if not, you can easily buy them in any store.
- butter – I used butter with 82% fat content here, if you want you can also use vegetable butter.
- sugar – for cookies, I recommend using powdered sugar, which will combine nicely and quickly with the rest of the dough. I put little of it in the dough itself, because the cookies will then be filled with sweet chocolate.
- flour – I used wheat flour here – it can be type 450, 500 or 550. If you want to make gluten-free chocolate cookies, you can use a light blend of gluten-free flours.
- chocolate-nut cream – this can be traditional Nutella, or substitutes available in discount stores. Nutella is a popular cream that works perfectly as a filling in various baked goods. Thanks to its creamy consistency, Nutella creates great combinations in cakes and sweet pastries. In the case of cookies filled with Nutella, such as these chocolate Nutella cookies – Nutella adds depth of flavor, sweetness, and a charming appearance.

What to fill cookies with instead of Nutella?
If you don’t want to use Nutella or any other chocolate-nut cream due to their poor ingredients, you can heat 50 ml of heavy cream in a saucepan and, when hot, add 100 g of chopped milk chocolate. Mix them thoroughly and set aside to cool. You can spread this chocolate on the cookies and stick them together in pairs.
If you don’t want to use chocolate at all to fill the cookies, fruit jam or preserve will work just as well. For such chocolate cookies, a combination with raspberries or cherries will be particularly great. Orange preserve can give the cookies a strong festive character. Its taste will perfectly complement the crispy chocolate cookies.
Preparation of chocolate cookies
Prepare the dough for chocolate cookies similar to shortcrust pastry. Transfer all ingredients to a bowl or food processor and knead into a uniform dough. If the dough doesn’t stick together well and doesn’t form a smooth mass, you can add a little cold water (or cold milk) – this usually helps the dough come together nicely. The finished dough must be chilled in the refrigerator for about 30-60 minutes. Although you can also prepare it in advance (e.g., the day before). If the dough has been chilling for longer than an hour and is very hard, you can gently and briefly knead it before rolling to make it more pliable.

How to make a pattern on cookies?
To make such a festive pattern on chocolate cookies, you will need a special rolling pin with carved patterns. The deeper these patterns are carved, the more distinct the pattern will be. Additionally, such patterns are best made on shortbread cookies that do not rise and spread during baking. Therefore, it is best if the cookie dough and cookies are well chilled – this will prevent excessive spreading during baking.
Never roll out the dough immediately with a patterned rolling pin! First, roll out the dough with a regular rolling pin – to a thickness of about 5 mm, and only then lightly roll out the flattened dough with the patterned rolling pin – gently press the rolling pin so that the pattern is imprinted. But don’t do it too hard, as the dough may stick firmly and tear off. To prevent the patterned rolling pin from sticking strongly to the dough, it’s worth dusting and coating the dough with flour. Excess flour can then be gently brushed off or blown away.

How to bake chocolate cookies?
Baking cookies is another important step in preparing chocolate cookies filled with Nutella. To achieve perfect cookies, it is essential to set the correct baking temperature and time. When baking chocolate cookies, it is best to preheat the oven to 170°C (when using convection mode). If you are baking cookies without convection but in top/bottom heat mode, set the oven to 180°C. Bake the cookies for about 10-12 minutes. It is worth remembering that every oven may operate slightly differently, so it’s good to observe the cookies during baking and adjust the time and temperature to your own equipment. While baking cookies, it is also important not to open the oven too often, as this can affect the even baking of the cookies. However, if you notice that the cookies are starting to brown too much, it is worth reducing the baking temperature by a few degrees.
I baked my cookies on two large baking sheets included with the oven simultaneously. By baking them in convection mode, I ensured they were evenly baked. If you are baking them in top/bottom heat mode, you can swap the trays halfway through baking so that the chocolate cookies are more evenly baked.

How to store chocolate marquise cookies?
Finished cookies filled with chocolate-nut cream are best stored in an airtight container. A large decorative glass jar with a lid will work perfectly here, in which such patterned cookies will look beautiful and everyone will be able to admire them. If you don’t have such a jar, transfer the cookies to a metal cookie tin or a plastic container with a lid. The shortbread cookies themselves can last a very long time in such an airtight container; when filled with chocolate cream, they will also last a long time, but shorter than the cookies alone.
