- 100 g dark chocolate
- approx. 280 g plum jam (- 1 standard jar)
- 100 g sugar (- half a glass – or to taste)
- 3 eggs (size L)
- 150 g wheat flour – all-purpose (- 1 cup)
- 2 teaspoons baking powder
- 2 teaspoons gingerbread spice

How to make chocolate gingerbread
- In a large pot, melt the butter together with the broken chocolate – stir until combined. Remove from heat.100 g butter, 100 g dark chocolate
- Add the plum jam and mix.approx. 280 g plum jam
- Add sugar and mix.100 g sugar
- Add eggs one by one and mix thoroughly after each addition.3 eggs
- Add flour, baking powder, and gingerbread spice – mix with a spoon.150 g wheat flour – all-purpose, 2 teaspoons baking powder, 2 teaspoons gingerbread spice
- Transfer the dough to the prepared pan.
- Bake in an oven preheated to 170 degrees (convection) for about 45-50 minutes – until a dry stick comes out clean.
- After baking, cool the gingerbread cake.
How to make chocolate glaze for gingerbread
- In a saucepan, heat the heavy cream – when it’s very warm, add the broken chocolate to it.100 ml heavy cream
- Stir until the chocolate melts.100 g dark chocolate
- Cool the glaze and when it thickens slightly, spread it over the top of the cake.
- You can also use milk chocolate here, just melt it in a smaller amount of heavy cream – use a maximum of 75 ml.

Christmas gingerbread with chocolate – notes
Today I have the perfect Christmas gingerbread, which is soft and delicious!
What’s more, it’s an express gingerbread, because its preparation takes a maximum of 20 minutes – and I think even less.
For the gingerbread to be nicely aromatic, use a good gingerbread spice mix. If you’re using a store-bought spice mix, first check its ingredients – if flour, sugar, cocoa are listed first, the spice mix will be weakly aromatic. Flour doesn’t smell like spices! Buy a spice mix that contains only spices, not essentially everything else. Or even better, make your own spice mix!
There has long been a gingerbread spice mix on the blog, and it’s so super aromatic that even a small amount gives an excellent taste! You must try it.
What else do you need to bake gingerbread?
This is chocolate gingerbread, so of course chocolate – specifically dark chocolate. I also made a dark chocolate glaze because I don’t like overly sweet cakes. But you can also make a chocolate glaze from milk chocolate.
Besides chocolate, you’ll need a jar of plum jam. I used a 280g jar – it can also be one in the range of 250-300g. The added plum jam gives the gingerbread a nice, slightly plum flavor and delicate sweetness. That’s why I used only a small amount of sugar here, barely half a cup. For me, this sweetness of the cake (with dark glaze) was perfect. However, if you like sweeter cakes, you can use more sugar – e.g., a whole cup.

How to make gingerbread with plum jam – tips
To make quick gingerbread with plum jam, you first need to melt the chocolate with butter. Then, to this melted chocolate, you add the rest of the ingredients. You don’t need to cool the mixture; immediately after melting, add the plum jam and sugar. Added to the chocolate, they will cool it down, so you can then safely add the eggs, and then the flour with baking powder and gingerbread spice.

How long to bake chocolate gingerbread?
I baked my chocolate gingerbread in a 30 cm long loaf pan for about 45 minutes. If you want a slightly taller cake, or if you have a smaller loaf pan, extend the baking time – bake until a skewer inserted into the center of the cake comes out dry. After baking, cool the chocolate gingerbread and finally drizzle with chocolate glaze.
Such chocolate gingerbread with plum jam is perfect for eating right away!
