Today I invite you to a real feast for chocolate lovers. Chocolate rocher cake is a fluffy chocolate cake prepared with dark chocolate, plus an incredibly delicious chocolate-nut cream with hazelnuts and a delicious chocolate glaze on top. You can serve such a cake for special occasions – such as birthdays – or enjoy it with your weekend coffee. I highly recommend it!

- 125 g butter (soft)
- 150 g powdered sugar (- 1 cup)
- 3 egg yolks (- from size L eggs)
- 3 egg whites
- 100 g chocolate (dark)
- 150 g wheat flour – all-purpose (- 1 cup)
- 2 teaspoons baking powder

- 250 g mascarpone cheese
- 100 g chocolate (milk)
- about 50 g hazelnuts (- chopped)

- 50 ml heavy cream
- 100 g chocolate (milk)

How to make creamed chocolate cake
- Break the chocolate into pieces and melt it in a double boiler (or microwave) – set aside to cool.100 g chocolate
- Mix the butter with sugar until a white and fluffy mass is formed.125 g butter, 150 g powdered sugar
- Sift the flour through a sieve together with baking powder.150 g wheat flour – all-purpose, 2 teaspoons baking powder
- Add the cooled chocolate to the butter and mix briefly.
- Add the egg yolks and mix until combined.3 egg yolks
- Add the flour to the batter and mix on low speed – just until combined.
- Whisk the egg whites until stiff and add to the batter – gently fold in with a spatula.3 egg whites
- Transfer the chocolate batter to the prepared pan.
- Bake in an oven preheated to 180 degrees Celsius (top/bottom heat) for about 50 minutes – until a dry skewer comes out clean.
- After baking, cool the cake, then cut it into two layers.
How to make chocolate-nut cream
- Melt the milk chocolate in a double boiler and let it cool slightly.100 g chocolate
- Transfer the mascarpone cheese to a bowl, add the hazelnuts and chocolate – mix until combined.250 g mascarpone cheese, about 50 g hazelnuts
- Spread the cream on the bottom cake layer and cover it with the second layer.
How to make chocolate glaze
- Break the chocolate into pieces, transfer to a heatproof bowl, add the heavy cream and melt in a double boiler.100 g chocolate , 50 ml heavy cream
- Cool the glaze slightly, then spread it over the top of the cake.
- Finally, sprinkle the cake with chopped nuts.hazelnuts

Chocolate cake with nut cream – notes
I recently baked such a chocolate wonder for my husband :)
The combination of chocolate and nutty flavors reminded me of Rocher pralines, hence the idea for the cake’s name – chocolate rocher cake.
This cake is super chocolatey, and I used a total of 3 bars of chocolate for it.
The chocolate for this cake should be melted and slightly cooled beforehand.
I melted it in a water bath.

How to melt chocolate in a water bath?
Pour a little water into the bottom of a small pot – about 2 cm.
Place a heatproof or metal bowl on top, so that it is partially inside the pot but does not touch the water.
Put the broken chocolate into the bowl, turn on the burner, and heat the chocolate until it melts – stir occasionally.
Cool the prepared chocolate and then add it to the cake.
When preparing the glaze, I added a little heavy cream to the chocolate – pour it into the bowl with the chocolate before melting it and heat them together.

How to make chocolate cake with chocolate-nut cream – tips
First, I baked a chocolate cake with dark chocolate and left it to cool.
Then I cut the cake into two layers.
Chocolate-nut cream is very simple and quick – just mix mascarpone cheese, melted milk chocolate, and chopped nuts.
I recommend hazelnuts here, but if you don’t have them, or are allergic, you can use other nuts, or almonds as a last resort.
Spread all the chocolate cream onto the bottom cake layer and cover with the top layer.
Now all you have to do is spread the cake with chocolate glaze and sprinkle with chopped nuts.
You don’t need to chill the cake in the fridge.
I didn’t even store it in the fridge and nothing happened to it :)
