Recipe for a very chocolatey zucchini cake – Zucchini Bread
Today I have for you a recipe for chocolate zucchini cake in American style. In the United States, this cake is called Zucchini Bread, which is exactly Zucchini Bread. Most often it is in chocolate form and with extra chocolate on top. I made my bread with a delicious and sweet milk chocolate glaze.

- 350 g wheat flour – all-purpose (- 2 and 1/3 cups)
- 2 teaspoons baking powder
- 30 g unsweetened cocoa (- 1/3 cup)
- 2 eggs (size L)
- 200 g sugar (- 1 cup)
- 125 ml oil
- approx 80-120 ml milk (- to consistency)

- 50 ml heavy cream (- I used 30%)
- 100 g milk chocolate

How to make chocolate zucchini cake
- Wash the zucchini, cut off the ends, and grate it on a coarse grater – do not squeeze out the water.approx 260 g zucchini
- In a large bowl, mix the dry ingredients – flour, cocoa, and baking powder.350 g wheat flour – all-purpose, 2 teaspoons baking powder, 30 g unsweetened cocoa
- In a second bowl, mix sugar, eggs, and oil.2 eggs, 200 g sugar, 125 ml oil
- Add the wet ingredients to the dry and start mixing.
- Add the grated zucchini with any liquid that may have separated.
- Mix together – if the batter is thick, add milk (I added some).approx 80-120 ml milk
- Transfer the batter to the prepared pan (mine was greased with butter and floured).
- Bake the cake in an oven preheated to 170 degrees Celsius (fan-assisted) for about an hour – until a skewer comes out clean.
- After baking, cool the cake.
How to make chocolate frosting for the cake
- Briefly heat the heavy cream in a saucepan.50 ml heavy cream
- Break the chocolate into pieces and add to the hot cream – mix thoroughly – until dissolved.100 g milk chocolate
- Cool the frosting, and when it thickens, spread it over the top of the cake.

Chocolate zucchini cake – notes
My husband recently went for another run – this time it was Chudy Wawrzyniec – so as usual, I wanted to bake him a cake that would give him energy before the run. For trips, the best cakes are those that are easy to transport and won’t spoil if they’re not refrigerated.
I happened to have a lot of zucchini, so I decided to use it and bake American Zucchini Bread. I found a recipe online and got to work.

How to make chocolate zucchini cake – tips
The recipe itself is incredibly simple and requires only basic ingredients. Prepare the cake entirely without using a mixer. A spoon and a bowl are enough. I’ve prepared a short video of the preparation especially for you and added step-by-step photos. During preparation, I noticed that the batter from this recipe turned out terribly thick, and even adding moist zucchini didn’t allow me to mix the batter thoroughly. That’s why I added a little milk, and then everything combined nicely. Remember – if you have problems with overly thick batter (any kind), you can always add a little milk to it in portions!

What kind of zucchini for the cake?
Here I most recommend green zucchini – not too large, so it doesn’t have big seeds and is juicy. Cut off both ends of the zucchini and grate it with the skin on using a large-holed grater. During grating, or after standing for a while, water may form in the zucchini. Do not drain it and do not squeeze the zucchini. This cake, as I wrote above, is very dense, and this water will add moisture to it.

How many calories does zucchini cake have?
One serving of cake (when cut into 13 pieces) will have about 310 calories – and that’s the calorie count with chocolate glaze. If you want to lower the calorie count a bit, a slice without chocolate glaze will have about 260 calories. It’s up to you which version you choose, but chocolate zucchini cake tastes divine with that sweet chocolate glaze on top.
I made the glaze with milk chocolate, but you can also use dark chocolate – in that case, melt it in about 75 ml of heavy cream.
