Today I invite you to autumn cinnamon apple cake and spiced streusel. This delicious and aromatic creamed cinnamon cake is layered with apple pieces coated in cinnamon and nutmeg. The top of the cake is a simple streusel made with added cinnamon and nutmeg. The whole thing is delicious and perfect for an autumn dessert.   • 200 g wheat flour – all-purpose (1 and 1/3 cups)
  • 1 teaspoon baking powder
  • 0.5 teaspoons cinnamon
  • 170 g butter (softened)
  • 150 g powdered sugar (1 cup)
  • 3 eggs (size L – room temperature)
  • 80 ml buttermilk (room temperature)

  • 75 g wheat flour (1/2 cup)
  • 70 g butter (in pieces)
  • 45 g sugar (3 tablespoons (slightly heaped))
  • 0.5 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

How to make cinnamon apple cake step by step

    Step 1 – preparations

    • Take out the eggs, buttermilk, and butter from the fridge in advance to let them warm up.
      3 eggs, 80 ml buttermilk, 170 g butter
    • Grease the baking pan with butter and sprinkle with breadcrumbs or flour.
    • Preheat the oven to 180 degrees Celsius (top/bottom heat) or 170 degrees Celsius (fan-assisted).

    Step 2 – prepare the apples

    • Peel the apples and cut them in half, then into quarters.

    • Remove the core.
    • Cut the apples in half again – to get eighths, and cut them into larger pieces – cubes.
    • Add cinnamon to the apples – if you like a strong cinnamon flavor, use 2 teaspoons – and nutmeg – mix thoroughly.

    Step 3 – Prepare the Creamed Cinnamon Dough

    • Sift the flour through a sieve together with baking powder, add cinnamon and mix.
      200 g wheat flour – all-purpose, 1 teaspoon baking powder, 0.5 teaspoons cinnamon

    • Beat the butter with powdered sugar for several minutes on high speed with a mixer – until you get fluffy, light, and thick butter.

    • Add to the butter one egg at a time and a tablespoon of the mixed flour.

    • Mix briefly after each addition on low speed with a mixer – just until combined.
    • Add about half of the remaining flour and mix briefly on low speed.

    • Pour in the buttermilk and mix briefly.

    • Add the rest of the flour and mix briefly – stop when you still see remnants of flour and briefly mix them in with a spoon.

    • Transfer about 2/3 of the dough into the pan and spread it in an even layer.

    • Add the apples in cinnamon and spread them evenly.

    • Spread the rest of the dough over the apples.

    Step 4 – Prepare the Crumble

    • Transfer the crumble ingredients to a bowl and quickly combine them with a fork or your fingers.
      75 g wheat flour, 70 g butter, 45 g sugar, 0.5 teaspoon cinnamon, 1/4 teaspoon nutmeg

    • Sprinkle the crumble over the top of the cake.

    Step 5 – Bake the Cake

    • Place the cake in the preheated oven and bake for about an hour – until a toothpick comes out clean.
    • After baking, let the cake cool slightly.

    Cinnamon Apple Cake with Streusel – notes

    I recently craved a simple but delicious apple cake, and since I constantly need new recipes for the blog, I ventured into the depths of the internet for inspiration. On the blog Pies and Tacos, I spotted a recipe for apple cake with streusel and decided to try it. But I prepared my own version – more adapted to Polish metric systems :) The cake itself, after baking, was very aromatic and had strongly cinnamon-flavored soft apples inside. I love cinnamon, its taste and aroma, so the cake was perfect for me! Be sure to bake this cake in autumn, especially on colder and gloomier days – then this cake will definitely cheer you up!

    What ingredients are necessary to bake cinnamon apple cake?

    To bake this cinnamon apple cake, you only need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.

    • apples – about 300 g of apples is enough for the cake – mine weighed 250 g after peeling and removing the cores, which are 2 medium apples
    • cinnamon and nutmeg – you need them ground; if you don’t have nutmeg, omit it, you can then use a little more cinnamon, or you can use cloves instead of nutmeg if you like their taste and aroma
    • buttermilk – to prepare the cake, you will need 1/3 cup of buttermilk at room temperature; you can substitute it with kefir, thinner natural yogurt, or, as a last resort, milk
    • butter – I used extra butter with 82% fat content; if you don’t use butter, you can substitute it with vegetable butter

    How to warm ingredients to room temperature?

    If you forget to take the ingredients out of the fridge earlier (you need to take them out at least 2 hours in advance), you can help yourself in another way. You can briefly heat the butter in the microwave – and if you don’t have one, place the bowl with butter over a pot of boiling water. This way, the butter will warm up and soften. You can also briefly heat the buttermilk (and its substitutes) in the microwave, and if you don’t have one, place the glass with buttermilk in a pot of hot water. Transfer the eggs to a bowl and cover them with hot water, leaving them there for several to a dozen minutes.

    How to serve cinnamon cake with apple pieces?

    You can serve the cake, still warm and thus more aromatic, with a scoop of your favorite ice cream. And I served my cake with a delicious homemade vanilla sauce (crème anglaise). This sauce, based on egg yolks, milk, and heavy cream, tastes excellent and is perfectly suited for all cakes, as well as desserts and ice cream.     How to store cinnamon apple cake?

    Apple cake can stay out for several days – on the kitchen counter. To prevent it from drying out, it’s worth covering it with a cake dome or transferring it to a container with a lid. If the cake is to last longer than a few days, you can store it in the refrigerator. Due to the large amount of butter, such a chilled cake will be slightly firm right after being taken out of the fridge. Therefore, it’s best to warm it at room temperature for at least 30 minutes before eating so that it softens. You can also briefly heat it in the microwave.

    Apple cake with crumble topping is also suitable for freezing. You can freeze it for about 3 months.
