Today I have a delicious and beautiful coconut-cheesecake tart. It’s a butter-free shortcrust tart – made with coconut oil, which gives it a nice and slightly coconut flavor. The filling of this tart is a light cheesecake with a touch of nut cream and, on top of that, an amazing melted chocolate with coconut oil. This combination of flavors is out of this world! - 150 g wheat flour – all-purpose (- 1 cup)
- 60 g coconut oil (I used unrefined from Allnutrition)
- 1 tablespoon powdered sugar
- 1 egg yolk
- cold water (a little – to consistency)
ingredients for cheesecake tart filling
- 500 g light quark cheese (for cheesecakes – low-fat – mine with 6% fat content)
- 2 tablespoons Nutlove Crispy Hazelnut cream (peanut butter can also be used)
- 50 g sugar ((1/4 cup) if you use peanut butter, use 100 g sugar)
- 1 egg (size L)
- 20 g vanilla pudding (powder – half a packet)

- 100 g chocolate (mine is milk chocolate, dark chocolate can also be used)
- 10 g coconut oil (1 teaspoon)

How to make coconut shortcrust pastry for tart
- Knead the dough from flour, coconut oil, powdered sugar, and egg yolk.150 g wheat flour – all-purpose, 60 g coconut oil, 1 tablespoon powdered sugar, 1 egg yolk
- If the dough doesn’t want to stick together, add a little cold water and knead.cold water
- Wrap the dough in foil and put it in the fridge for an hour.
- Take out the chilled dough and roll it out thinly.
- Grease the tart baking pan with butter and sprinkle with breadcrumbs.
- Line the mold with the dough.
- If you wish, you can pre-bake the dough for 10 minutes at 200 degrees (top-bottom mode). I didn’t pre-bake it, but then it became slightly moist from the filling.
How to make cheesecake filling for tart
- Transfer the quark cheese to a bowl, add the egg, sugar, pudding powder, and Crispy Hazelnut cream or peanut butter from Allnutrition.500 g light quark cheese, 2 tablespoons Nutlove Crispy Hazelnut cream, 50 g sugar, 1 egg, 20 g vanilla pudding
- Briefly blend the ingredients – just until combined.
- Spread the mixture onto the base, smooth the surface, and place in the oven.
- Bake at 180 degrees (top-bottom mode) for about an hour.
- After baking, cool the tart.
How to make chocolate glaze for tart
- Break the chocolate and transfer it to a heatproof bowl, add coconut oil.100 g chocolate, 10 g coconut oil
- Melt the chocolate in a bain-marie – pour some water into a pot, place a bowl with chocolate on top, and steam until the chocolate melts.
- Pour the melted chocolate over the top of the tart.
- Before serving, decorate as desired.

Coconut tart with quark – notes
Coconut-cheesecake shortcrust tart is another recipe created in cooperation with the SFD store.
This time I tried their coconut oil and the sweet Crispy Hazelnut cream inspired by popular candy bars.
As usual, I am delighted with the cream – you have to admit that they make them delicious.
And what’s more, they don’t contain white sugar, only naturally occurring ones (here it’s maltitol).
Allnutrition coconut oil is unrefined and cold-pressed, and it smells incredibly like coconut.
The shortcrust pastry I made with it also smelled beautifully of coconut :)

For my coconut-cheesecake tart, I used light and low-calorie quark for cheesecakes.
Thanks to this – despite the sweet cream and a thick layer of chocolate on top, the cake turned out to be quite low-calorie.
I think 270 calories per 100g is a great result for such a cake :)
Crispy Hazelnut cream is already sweet on its own, so I added only a little sugar to the quark mixture (just 1/4 cup).
If you don’t have this cream on hand, you can use any other from Allnutrition, or peanut butter.
If you use peanut butter, add more sugar to the quark – I think doubling the portion will be perfectly sufficient.
