No-bake coconut cake – notes
I invite you to try the no-bake coconut square cake.
Today on the blog, it will be very coconutty, chocolatey, and coffee-flavored all at once.
And of course, very delicious :)
I prepared the perfect cake for me!
On biscuits, with ladyfingers soaked in coffee, with a light and not too sweet pudding cream with the addition of coconut liqueur.
I used store-bought coconut liqueur here, but you can make your own homemade version – you won’t regret it, because it’s delicious.
If you’re concerned about the alcohol, you can use a non-alcoholic coconut cocktail syrup instead.
Instead of regular coffee, you can soak the ladyfingers in grain coffee. That way, kids can enjoy the cake too.
How to Make Coconut Slice Cake – Tips
Start by arranging a layer of cookies in the pan. Pour the melted chocolate over them, spread it evenly, and cover with a second layer of cookies.
Prepare the custard cream and spread it over the cookies.
The custard cream is made by mixing the custard with butter. As with all butter-based creams, it’s important that the ingredients are at a similar temperature.
Otherwise, the cream may split!
First, prepare the custard and let it cool to room temperature.
Beat the softened butter really well — I usually mix it for up to 10 minutes — until the butter becomes almost white. Only then start adding the custard, one spoonful at a time.
Even so, sometimes the buttercream can still split.
How to Fix Split Buttercream?
If your buttercream splits, you can try to save it. Place a pot with a little water on the stove and bring it to a boil. Set the bowl with the cream over the pot and gently heat the cream while mixing it continuously. The steam from the water should help the cream come back together and regain the right consistency.
If that doesn’t work, unfortunately, you may need to make another batch of the cream :(
Arrange the coffee-soaked ladyfingers over the cream, then spread the whipped cream and mascarpone filling on top.
This no-bake coconut cake needs to chill in the fridge for several hours (or, even better, overnight). This will allow the cookies and ladyfingers to soften slightly from the cream, making the coconut slice easy to cut.

No-bake coconut cake recipe
I invite you to try a delicious no-bake coconut cake. I prepared this coconut cake on biscuits layered with chocolate and a coconut pudding cream with butter. To this, I added ladyfingers soaked in coffee and a whipped cream topping. This coconut square might look complicated, but it's not! The only thing you need to watch out for is the pudding-butter cream. Such creams tend to curdle if they are poorly prepared. It is important that the pudding, butter, and liqueur are at the same temperatures, and it is important to mix the butter well.

See my step-by-step recipe described above. Prepare the pudding in advance and cool it to room temperature. Also, take the butter out of the fridge earlier so that it softens well. However, the heavy cream and mascarpone cheese for the topping must be well chilled. If the heavy cream is not well chilled, you won't be able to whip it into whipped cream! After chilling in the fridge, the no-bake coconut cake nicely "matures," and the biscuits become soft. Thanks to this, the pudding cake on biscuits can be nicely cut into portions. The coconut cake itself is made in a large pan, so there will be enough for many people. Therefore, you can prepare it for a family celebration or for holidays. The no-bake coconut cake looks very nice and tastes great, so it will surely appeal to all guests. Be sure to check out my no-bake coconut cake recipe and prepare it for the weekend.
