Fluffy cheesecake with fruits – notes
I invite you today to try a sensational cottage cheese soufflé with fruits. This can essentially be a great warm breakfast or a dessert. This soufflé can be a light and fluffy baked omelette or a delicate cheesecake with fruits. No matter how you treat it, it will always taste delicious. I’ll also add that this cheesecake has very few calories – so you can eat it without guilt. For its preparation, I used cottage cheese for cheesecakes – but one of the lighter and thinner varieties. You can also use ricotta cheese, or ‘bieluch’ type cheese.

How to make cottage cheese soufflé with fruits – tips
Blend light cottage cheese with natural yogurt, a little sugar (it can also be xylitol or erythritol) and egg yolks. Whisk the egg whites until stiff and gently mix with the cottage cheese mixture. Transfer the mixture to a baking dish – mine is 30 cm in diameter. Arrange fruits on top – if they are large, cut them into smaller pieces. Bake and enjoy while still warm. And whatever is left, you can eat cold with coffee!
I also recommend baked fluffy omelette – super light and delicious!
