  • 700 ml milk
  • 3 tablespoons sugar (or to taste)
  • 50 g chocolate (chopped – I used dark)
  • 100 g butter (soft)

  • 50 g dark chocolate
  • 500 ml heavy cream (well chilled)
  • approx 2 tablespoons powdered sugar (or to taste)

How to make chocolate pudding cream for 3bit cake

  • Pour off about half a glass of milk and add the pudding powder and sugar to it – mix thoroughly.
    2 packages chocolate pudding, 700 ml milk, 3 tablespoons sugar
  • Bring the rest of the milk to a boil – pour the mixed pudding into the heated, but not yet boiling, milk.

  • Add the chopped chocolate and stir while cooking until the pudding thickens.

  • Immediately cover the top of the pudding with cling film to prevent it from drying out and set aside to cool – at room temperature!

  • Transfer the soft butter to a large bowl and beat on high speed for about 10 minutes – until it becomes fluffy and light in color.

  • Then start adding the cooled pudding (at room temperature) one tablespoon at a time and mix briefly – if the mixture becomes thick, you can change the mixer attachments to dough hooks – it will be easier to mix.

Chocolate 3bit preparation

  • Line the pan with baking paper, cling film, or aluminum foil and place one layer of biscuits on the bottom.

  • Transfer the dulce de leche to a bowl, add the steamed chocolate and mix together.

  • Place a second layer of cookies.

  • Pour the cold heavy cream into a bowl, add powdered sugar and whip on high speed until you get thick whipped cream.

  • Spread the whipped cream over the biscuits and put the whole thing in the fridge – preferably overnight.

  • Before serving, you can additionally sprinkle the top of the 3bit cake with grated chocolate.

Iconic 3 bit cake in a chocolate version

3bit cake is probably one of the most popular cakes. Made without baking, with biscuits layered with dulce de leche and pudding cream, it is a favorite cake of many Poles. I also really like traditional 3bit cake, although since I’ve been sweetening my baked goods less, it’s become a bit too sweet for me. That’s why I recently made a less sweet and nicely chocolatey version of this cake for us. I sincerely encourage you to try this recipe.

Basic ingredients for 3 bit cake

To prepare the chocolate 3bit, you will only need a few basic ingredients, which you can easily get in any store. Below is a short list with possible substitutes.

  • biscuits – you will need about 400 g of biscuits here – you can use plain butter biscuits, or enhance the chocolate flavor more intensely by using cocoa biscuits. For one layer, I used 17-18 biscuits.
  • chocolate pudding – the most ordinary pudding in a large package (not a hot cup!). My pudding was sugar-free, but if you buy one with sugar, you can skip adding sugar from the recipe.
  • chocolate – for my chocolate 3bit, I used dark chocolate – both for the dulce de leche layer and for the pudding. If you prefer sweeter cakes, you can use milk chocolate for the pudding. The dulce de leche layer is very sweet, so adding dark chocolate to it will only help, not harm.
  • whipping cream – I used 30% whipping cream in a carton. You can also use 36% cream. I only added powdered sugar to my whipped cream – when the cream is well whipped, it will hold nicely on the cake. I don’t add cream stabilizer to mine, but if you prefer whipped cream with this addition, you can certainly use it.

Can butter be replaced with another fat?

If you want to prepare a more vegan version of this cake, or simply don’t like butter, you can use vegetable butter. Just remember to take it out of the fridge earlier so it warms up and softens at room temperature. For the vegan version, also replace the milk for the pudding with plant-based milk. You can replace whipping cream with plant-based cream, or blend well-chilled coconut cream (look for a can labeled coconut cream).

How to prepare 3 bit cake – tips

3bit cake is a no-bake cake and easy to prepare. Some people might find preparing the pudding cream a bit challenging, but if you follow the instructions, there shouldn’t be any problems. You can also prepare the pudding cream in advance and store it in the refrigerator.

How to prepare homemade pudding cream?

For the pudding cream to turn out well, it’s important that all ingredients are at room temperature. If the butter and cooked pudding have significantly different temperatures, the cream might not work! It’s best to take the butter out of the fridge at least two hours in advance so it warms up and softens. And always cool the finished pudding at room temperature – don’t put it in the fridge or on the balcony. The butter for the cream needs to be mixed very well – I even mix it for 10 minutes. Only then do I add the chocolate pudding spoon by spoon and mix briefly – just until the ingredients combine. If for some reason the cream still spoils – starts to become liquid and lumpy, you can try to save it.

How to save curdled pudding cream?

If your cream spoils, or curdles, place a pot with a few centimeters of water at the bottom on the stove and start boiling it. Place a bowl with the pudding cream on top of the pot (but so that it doesn’t touch the water surface). Heat the cream this way – you can stir it or mix it at low speed. As it heats, the cream should change its consistency to creamy and more compact. Then you can spread such cream on the biscuits.

How to make dulce de leche for 3 bit cake?

For the dulce de leche layer, I used ready-made fudge mass from a can. If you can’t get dulce de leche, but you have sweetened condensed milk in a can, you can make dulce de leche from it. Pour water into a large pot and place the can of sweetened milk inside. Boil the can for about 2 hours. After this time, the condensed milk should turn into dulce de leche. Cool the can, remove the dulce de leche from the can, and mix it with melted dark chocolate.

How to melt chocolate in a water bath?

Don’t know how to melt chocolate in a water bath? It’s very simple. Just pour some water into a saucepan or smaller pot – to the bottom and put it on to heat. Place a heatproof bowl on top (but so that it doesn’t touch the water surface) and add chopped chocolate. Heat it this way until the chocolate becomes liquid – you can stir it occasionally to speed up the process.

3 bit cake on sponge cake – how to make?

Do you prefer to prepare this cake on a sponge cake? No problem! Just bake a sponge cake from 4 eggs – see such a sponge cake in my peach cake recipe. After baking, cool the sponge cake (I suggest baking it the day before and storing it), then cut it into two layers. When assembling, spread the bottom sponge cake layer with dulce de leche with chocolate and immediately with pudding cream, then place the second sponge cake layer on top and whipped cream on it. If you want to make a cake with three sponge cake layers, you need to make it with 6 eggs. And how to make a 3 bit cake on a cocoa sponge cake? Instead of a light sponge cake, prepare a chocolate sponge cake for a large baking tray. You can use your own recipe, or my favorite recipe for chocolate sponge cake with potato flour.

If you prefer a chocolate sponge cake instead of a traditional white one, I suggest preparing it using the Balladyna cake recipe. It will also be for two layers of sponge cake in the cake. If you want to make it with three layers of sponge cake, you need to scale the recipe to 6 eggs. How to store chocolate 3bit cake?

You must store 3bit cake in the refrigerator. First, chill it in the fridge overnight before serving – this will soften the biscuits from the cream and whipped cream, and the cake will be easy to cut into nice pieces. Afterwards, also keep it in the fridge because of the whipped cream.

Can 3bit cake be frozen?

You can freeze 3bit cake, but it’s best to do it without the whipped cream on top. Later, during thawing, the whipped cream might become watery. Therefore, it’s better to remove it and add fresh whipped cream after the cake has thawed.
