- 100 g fat (- I used melted coconut oil, but butter or regular oil can also be used)
- 150 g sugar ((3/4 cup) )
- 2 eggs ( – I used size L)
- zest from half a lemon
- 1 cup buttermilk (- 250 ml)
- 350 g wheat flour (all-purpose (2 and 1/3 cups) )
- 1.5 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 cup blueberries ( – about 160 g)

How to make baked blueberry donuts
- In one bowl, mix together the wet ingredients – oil, buttermilk, and eggs.100 g fat, 1 cup buttermilk, 2 eggs
- In a second bowl, mix together the flour, sugar, baking powder, baking soda, and lemon zest.150 g sugar, 350 g wheat flour, 1.5 teaspoons baking powder, 1/4 teaspoon baking soda, zest from half a lemon
- Pour the wet ingredients into the dry ingredients and mix thoroughly.
- Add the blueberries to the dough and gently mix.1 cup blueberries
- Spoon the batter into the donut molds.
- Bake at 220 degrees (top/bottom heat mode) for about 7-8 minutes.
- Gently remove the baked donuts and set aside to cool.
- I baked the donuts in batches (I have a mold for 6 donuts).
- You can drizzle the cooled donuts with glaze – just mix about a cup of powdered sugar with a few tablespoons of milk.

I definitely prefer this baked version because it’s much less caloric than the fried version.

Well, you’ll prepare them in a few minutes – and even without using a mixer!
Two bowls and a spoon are all you need. In one bowl, mix the dry ingredients, and in the other, the wet ingredients.
Combine both bowls, add the blueberries, and gently mix.
You can use fresh or frozen blueberries for them – you don’t need to thaw them beforehand.
Now, all you need to do is put the batter into a donut pan and bake them.
If you don’t have a donut pan, you can use mini muffin tins – with a hole in the middle, or finally, bake regular blueberry muffins (then extend the baking time).

Donuts, called 'donuts' in English, are one of my daughter's favorite snacks. She absolutely loves these baked donuts. Maybe it's because of their holey shape - I don't know. But I do know that when I make some, she eats most of them :) And it was the same this time. I baked a whole plate of baked donuts with blueberries and Weronika ate them all.
