  • 65 g butter (melted)

  • 200 g sugar (- 1 cup – or to taste)
  • 6 teaspoons gelatin
  • 120 ml water (cold)
  • approx 50-70 g meringues
  • approx 150 g fruit (- I used blueberries and redcurrants)

  • 200-250 ml heavy cream (well chilled – I used 30%)
  • 1-2 tablespoons powdered sugar (- optional – I didn’t use it)

How to make Eton Mess no-bake cheesecake

  • Crush the ladyfingers thoroughly – I blended them into a powder.

  • Add the melted butter to the ladyfingers and mix thoroughly.

  • Line the bottom of the paper-lined pan with the biscuit mixture.

  • Cover the gelatin with water and set aside for a few minutes to swell.
    6 teaspoons gelatin, 120 ml water

  • Blend the cheesecake cheese with sugar until smooth.
    1 kg cheesecake cheese, 200 g sugar

  • Briefly heat the gelatin until it becomes liquid. Add one or two tablespoons of cheesecake cheese to it and mix thoroughly.
  • Pour the tempered gelatin into the rest of the cheesecake cheese and blend thoroughly.

  • Add coarsely crushed meringues and fruit to the cheesecake cheese – mix with a spatula.

  • Transfer the mixture onto the ladyfinger base.

  • Place the cheesecake in the refrigerator to chill.
  • Before serving, decorate the cheesecake – whip the cream until thick – you can add a little sugar to it.
    200-250 ml heavy cream, 1-2 tablespoons powdered sugar
  • Spread the cream on top of the cheesecake.

  • Sprinkle the cheesecake with crushed meringues and arrange fresh fruit.

  • You can serve the cheesecake immediately, or store it in the refrigerator.

Eton Mess No-Bake Cheesecake – Notes

As I mentioned above, this beautiful no-bake cheesecake is inspired by the famous dessert Eton Mess. What is Eton Mess? It’s a very simple dessert usually consisting of whipped cream, crushed meringues, and fruit. Everything is layered in dessert glasses or tall glasses and served after chilling.

Despite the simplicity of the ingredients, the dessert is incredibly delicious, and my family loves it. You can use small meringues and crush them. Or, if you bake meringue and it doesn’t turn out well, cracks, then make this dessert.

How to Make No-Bake Cheesecake with Meringues – Tips

For the cheesecake, you will, of course, need meringues. You can certainly buy them – preferably from a patisserie for good quality. But you can also bake them yourself beforehand. Bake them using my meringue recipe – just don’t dip them in chocolate. You can make the meringues in advance and store them in an airtight container.

What fruits for Eton Mess cheesecake? That depends on you and the currently available fruits. All small fruits will work perfectly here. And larger ones are worth cutting into smaller pieces. You can also blend some of the fruits with a little sugar to get a fruit mousse and additionally pour it over the top of the cheesecake.

What kind of cheese for Eton Mess Cheesecake?

As you’ve probably noticed, I usually use cheesecake cheese from Piątnica. This cheese is fatty and very firm. However, in this case, I used a lighter and looser cheese. Specifically, I used cheesecake cheese from Lidl – it had 6% fat and about 108 kcal per 100g. You can also use President cheese or cheese from Biedronka here.

If you use Piątnica, or for example, Mojego Ulubionego, the cheese mixture will be firmer. In that case, add less gelatin – I think 4 teaspoons will be completely sufficient.

What for the base of Eton Mess Cheesecake?

I made the cheesecake base from blended ladyfingers mixed with butter. This allowed for a nice and thin base that also has a delicate crunch. If you want to further reduce the cheesecake’s calorie count, you can avoid blending the ladyfingers; instead, arrange them whole on the bottom and then spread the cheese mixture over them. In this case, it’s good to keep the cheesecake in the refrigerator longer (even overnight) before serving, so that the ladyfingers soften into the cheesecake mixture.

How many calories does Eton Mess No-Bake Cheesecake have?

As you probably saw above in the recipe itself, the cheesecake made with my products has only 144 kcal per 100g. However – if you divide it into 12 portions – as I do – then one such slice will have about 265 kcal. I still believe that’s not much, and everyone can eat a slice without guilt.
