- 100 g butter (soft)
- 150 g sugar (3/4 cup)
- 2 eggs (size L)
- 150 g wheat flour – all-purpose (1 cup)
- 50 g ground almonds (half a cup)
- 2 teaspoons baking powder
- 160 ml natural yogurt (at room temperature)
- approx 400 g plums
- 1 handful almond flakes

- 3 tablespoons sugar
- 2 tablespoons butter

How to make almond cake with plums and crumble
- Cream the soft butter with sugar until fluffy.100 g butter, 150 g sugar
- Mix the flour with baking powder and ground almonds.150 g wheat flour – all-purpose, 50 g ground almonds, 2 teaspoons baking powder
- Beat in one egg at a time into the butter mixture, add a tablespoon of flour and mix on low speed.2 eggs
- Add approximately half of the remaining flour and natural yogurt, mix briefly.160 ml natural yogurt
- Pour in the rest of the flour and mix briefly – just until combined.
- Grease the springform pan with butter and sprinkle with breadcrumbs or flour.
- Spread the batter and level the surface.
- Wash the plums, cut them in half and remove the pits.approx 400 g plums
- Arrange the plums on the cake.
- Sprinkle them with crumble (briefly mix the ingredients together with your fingers) and almond flakes.4 tablespoons flour, 3 tablespoons sugar, 2 tablespoons butter, 1 handful almond flakes
- Bake at 180 degrees Celsius (top-bottom mode) for approximately 45 minutes – until a dry stick comes out clean.
- After baking, cool.

Almond plum cake with crumble – notes
I invite you to try a simple and delicious Italian plum cake with almonds and crumble.
This cake is a perfect autumn bake.
It’s full of fruit, and it has a nice almond crunch.
To prepare the almond plum cake, you will need ground almonds.
You can buy them ready-made in the store.
If you don’t have them, you can finely grind regular almonds (it’s worth peeling them beforehand).
Additionally, you will need soft butter, which you mix with sugar, and natural yogurt.
To prevent a potential soggy bottom, the yogurt should be at room temperature.
I briefly warmed mine in the microwave.
For the cake, I used large hybrid plums. You can use any plums.
However, it’s better if they are not too soft, as too much juice can cause the cake to be undercooked/soggy.
I used a lot of plums and arranged them densely on the cake. Because of this, they sank deep into the cake during baking.
They were less visible, but the cake tasted delicious :)
