Recipe for simple pretzels from Jerusalem
Today I invite you to try delicious Jerusalem pretzels. These pretzels look a bit like bagels, but they are simpler and quicker to make. So if you have little time to make bagels, these pretzels will be an ideal substitute. Sesame pretzels taste great on their own as a snack, but you can slice them and eat them with your favorite toppings.

- 200 ml milk
- 20 g fresh yeast
- 60 ml water
- 3 teaspoons sugar (- divided into portions – 1 teaspoon and 2 teaspoons)
- 500 g wheat flour (preferably type 500 or all-purpose)
- 1 pinch salt
- 60 g olive oil (1/4 cup)
- sesame seeds (for sprinkling)
- 1 egg (+ 2 tablespoons milk for brushing pretzels)

How to make sesame pretzels
- Heat the milk together with water to lukewarm temperature.200 ml milk, 60 ml water
- Crumble the yeast and add to the water with milk, add a teaspoon of sugar and mix,20 g fresh yeast, 3 teaspoons sugar
- Cover the starter with a towel and set aside for about 15 minutes.
- In a bowl, place the flour, the rest of the sugar, a pinch of salt, and olive oil.500 g wheat flour , 1 pinch salt, 60 g olive oil
- Pour in the yeast starter and knead the dough.
- Cover the bowl with the dough with a towel and set aside in a warm place to rise – for about an hour.
- Briefly knead the risen dough and divide it into 6 equal parts.
- Form them into balls, then make a hole in the center of each with your fingers and gently stretch the dough until it takes the shape of a ring.
- Cover the pretzels with a towel and set aside for half an hour to rise.
- Meanwhile, preheat the oven to 190 degrees – top-bottom mode.
- Brush the risen pretzels with egg mixed with two tablespoons of milk and sprinkle with sesame seeds.1 egg, sesame seeds

Sesame pretzels – notes
I found the recipe for these yeast Jerusalem pretzels in Sabina Francuz’s book “Flour and Water”.
The book is full of delicious and simple recipes for homemade bread – both yeast-based and sourdough. Many of them appealed to me, so I’m still baking from it.
The yeast pretzels were the first to be made.
They are made quickly and without major problems.
After baking, they are nicely fluffy and delicate inside.
And slightly sweet :)
My husband was the most surprised.
He prefers savory bread, but that didn’t stop him from making a sandwich with ham and cheese from this pretzel :)
A lot of olive oil is added to the dough, which makes the Jerusalem pretzels stay fresh longer and not dry out as much as homemade bread.
You can eat them plain – tearing off pieces, or spread with homemade jam, or like my husband – with ham.
It’s worth inviting children to bake – I think they’ll enjoy shaping the pretzels :)
