Jelly Cake like a Paradise Beach
Today I present to you the paradise beach cake, specifically a cake with jelly visible on the outside. Such cakes have recently become very popular, and I’m not surprised, because they look absolutely stunning. I made my visible jelly cake for my daughter’s birthday, and she was delighted with it, and guests “fought” over pieces with jelly. Be sure to prepare such a cake for a birthday!

Jelly on Top Cake – Notes
This is the paradise beach cake I prepared for my daughter’s 11th birthday.
Recently, a lot of cakes in this style have appeared on Pinterest, and I fell in love with them :)
I decided it would be perfect for Weronika.
And since she’s really into flamingos, I opted for a paradise beach – with delicate sand, flamingos, and palm trees.
I won’t give you an exact recipe, because what’s inside is up to you, but I’ll write down roughly what and how I did it.

How to Make a Paradise Beach Cake – Tips
I baked a sponge cake from 5 eggs in a 21 cm diameter mold – it came out so high that I cut it into 4 layers.
I prepared a raspberry cream – I blended raspberries and mixed them with raspberry jelly dissolved in 200 ml of hot water.
I added the cooled jelly to the cream made of whipping cream and mascarpone cheese.
I layered the sponge cake with cream and put it in the fridge for a few hours to set.
Then I cut off a part of the cake and placed it on top.
I covered the entire cake with a cream made of butter mixed with dulce de leche.
I placed a high cake collar around the cake.
I dissolved two jellies – one clear and one blue – in 600 ml of hot water and set them aside until they began to set. When it was quite thick, I carefully poured it onto the cake, creating an “ocean”.
Then I also placed various gummy sea creatures.

Once the jelly had properly set, I warmed the sides of the cake collar with a hairdryer and carefully removed it.
I finely blended sponge cake crumbs and sprinkled them on the sides of the cake – being careful with the jelly.
I made the flamingos from meringue – I first piped meringue rosettes, then necks with heads, and baked them that way.
Then I glued on toothpick legs with melted chocolate and drew beaks and eyes with a black edible marker :)

I made the palm tree from sugar paste.
And that’s it.
WOW effect guaranteed.

My daughter and guests were delighted.
And everyone wanted a piece with jelly.
Unfortunately, I don’t have a good photo of what the cake looked like inside, because I transported it for over two hours to our vacation at a lake house.
I took one with my phone, but in poor conditions – and it didn’t turn out well.
But despite my concerns, the cake traveled those two hours in perfect condition – I transported it secured in that high cake collar. The flamingos and palm tree traveled in a separate container.
