Recipe for a quick autumn cheesecake with maple syrup
Are you looking for the perfect cake that will bring a cozy, autumnal atmosphere into your home, and at the same time delight every guest from the very first bite? I have something absolutely perfect for you! This is a quick autumn cheesecake with maple syrup inspired by the brilliant recipe of the reliable Nigella Lawson. It is incredibly creamy, velvety, and literally melts in your mouth. Its secret lies in the harmonious combination of the deep, slightly caramel flavor of maple syrup and a crunchy, incredibly fragrant base of caramel biscuits and nuts. Best of all – you can make it in just a dozen minutes of active work!
Why bake this maple syrup cheesecake?
I spotted today’s maple syrup cheesecake with pecans in Nigella Lawson’s recipes and immediately wanted to try it. Her recipes are known for being simple, quick, and usually not requiring fancy ingredients, and that’s the case here too :) And why do I think it’s worth making such a cheesecake this autumn and beyond?
Simplicity and speed of preparation: Nigella’s recipes are famous for delivering spectacular results with minimal effort. You’ll prepare the cheese mixture in a flash – without time-consuming creaming and complicated steps.
Incredible biscuit and nut base: Instead of classic digestive biscuits, I combined ground Lotus Biscoff biscuits with ground pecans and butter. This base is fantastic – both sweet and crunchy.
Velvety, crack-free texture: Thanks to baking in a water bath, the cheesecake bakes evenly, doesn’t burn on the bottom, doesn’t crack, and has a flawlessly smooth, even top after baking.
Universal dessert for any occasion: This cheesecake will perfectly suit any role – it will sweeten a lazy autumn weekend with a cup of tea, delight the family during Sunday dinner, and thanks to its elegance, it can successfully become the star of the Christmas table!
Ingredients needed to prepare maple syrup cheesecake
To make this cheesecake at home, you will only need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
Biscuits: I used Lotus Biscoff biscuits; their caramel-spiced flavor perfectly complements the autumn atmosphere and maple syrup. But you can also use other shortbread biscuits, including digestive biscuits.
Pecans: More delicate and sweeter than walnuts, with a wonderful buttery note. Ground together with the biscuits, they give the base a unique aroma. If you can’t find them anywhere, replace them with walnuts or hazelnuts.
Curd cheese: Choose a good, thick, and full-fat or semi-fat cheesecake curd (from a tub with high fat content) or traditional curd cheese ground at least twice. Here, I tried a new product from Piątnica – ground creamy semi-fat curd cheese – it is less smooth than traditional cheesecake curd, and my mixture had visible lumps of curd.
Maple syrup: It gives the cheese mixture that deep, noble, autumnal flavor. It also works great as a topping just before serving! Syrup is the primary ingredient for flavor and sweetness, but if you absolutely want to make this cheesecake and don’t have maple syrup, you can use agave syrup – the cheesecake will have a different taste, but the consistency will be similar.
How to bake a cheesecake so it doesn’t crack or sink?
This maple syrup cheesecake is baked in a water bath. This means you need two baking pans – one for baking the cheesecake and a second, larger, and watertight one, into which you will place the cheesecake pan. To prevent the cheesecake from soaking up water, you must properly secure the pan. Very carefully wrap the springform pan from the outside with several wide layers of thick aluminum foil (or place it in a slightly larger silicone pan). This will prevent water from the bath from getting inside, and the biscuit and nut base will remain perfectly crispy.
Pour hot water into the second, larger pan and place both pans in the oven. Thanks to baking in water and at a lower temperature, the cheesecake bakes more evenly and rises gently. And another thing! Remember to cool it slowly in a slightly open oven! Slow cooling also ensures that the cheesecake maintains a smooth surface.
I don’t have aluminum foil – how to protect the baking pan?
If you started preparing the cheesecake and realized you don’t have aluminum foil and no way to protect the pan from being submerged in water, you can work around it. Place an oven-safe dish filled with water on the bottom of the oven, and above this dish, on the rack, place the cheesecake pan. Steam will rise during heating and surround the cheesecake pan.
Bake this unique cheesecake with maple syrup this weekend, sit back with a cup of coffee, and discover the taste of true autumn poetry! Be sure to let me know in the comments how you liked it, and if you post a photo on Instagram, tag my profile – I love seeing your bakes!
