Recipe for a simple almond cake with cherries for a large baking sheet
Today I invite you to try a delicious and incredibly simple and quick to prepare whipped cherry cake for a large baking sheet, which I baked especially for my husband’s run at DFBG on the 240 km route. The cake was supposed to provide energy to our boys, and it also had to be tasty and easy to eat. The cherry cake proved to be excellent, so I’m sharing the recipe with you.

If you like simple and delicious fruit cakes, you must bake this cherry and ground almond cake.

- 6 eggs (- size L)
- 200 g sugar (- 1 cup (or to taste))
- 300 g wheat flour – all-purpose (- 2 cups)
- 75 g ground almonds (- approx 9 tablespoons)
- 2 teaspoons baking powder
- 200 ml oil
- approx 500 g cherries
- 1-2 tablespoons wheat flour (- for cherries)
- approx 20 g chopped almonds (or almond flakes – 1 handful)

How to make almond cake with cherries
- Pit the cherries and add 1-2 tablespoons of flour to them – mix.approx 500 g cherries, 1-2 tablespoons wheat flour
- Whisk the eggs with sugar until very thick and fluffy.6 eggs, 200 g sugar
- Meanwhile, mix the flour with baking powder and ground almonds (mine were ground with skin, so they added a darker color to the cake).300 g wheat flour – all-purpose, 75 g ground almonds, 2 teaspoons baking powder
- Add flour alternately with oil to the batter and mix briefly – just until combined.200 ml oil
- Stop mixing when you can still see remnants of flour.
- Add cherries to the batter and gently mix.
- Transfer the batter to the prepared pan (mine was lined with baking paper).
- Sprinkle the top of the cake with chopped almonds or almond flakes.approx 20 g chopped almonds
- Bake the cake in an oven preheated to 170 degrees (convection, or 180 degrees top/bottom mode) for about 40 minutes – until a dry skewer comes out clean.
- After baking, you can additionally sprinkle the cake with powdered sugar.

Cherry cake with almonds – notes
As I mentioned above, I baked this delicious cherry and almond cake especially for my husband and his friends for a run at the DFBG mountain running festival. The guys ran a significant distance there, as much as 240 km. That’s about 50 hours on the trail and two nights practically without sleep.
My daughter Weronika, my friend Agatka, and I provided support for the boys, which involved driving from point to point along the race route and saving them from hunger, cold, and overheating :)
We tried to nourish and hydrate them properly so they could cover the distance. One of our nutritional elements was this cherry cake. I baked it in a large pan so that everyone would have enough (including us). I wanted the cake to be easy to transport and not get damaged during transit. The addition of cherries was meant to add flavor, freshness, and moisture. Ground almonds provided a portion of good fats essential for such exertion. Everyone really liked the cake, and I can share the recipe without any regrets.

How to make cherry and almond cake – tips
For my cake, I used fresh cherries and pitted them before adding them to the batter, so as not to “hit a pit” while eating the cake. Outside of cherry season, you can use cherries from compote or frozen ones (you don’t need to thaw them beforehand). To prevent the cherries added to the cake from sinking to the bottom, it’s worth mixing them with a small amount of wheat flour beforehand and then adding them to the batter.
My ground almonds were ground with their skins on (they were not blanched beforehand) and thus gave the cake a slightly brown color. You can, of course, use blanched ground almonds. If you don’t have ground almonds or cannot consume them, add ground nuts to the cake – e.g., hazelnuts.
To make the cake nicely fluffy, I thoroughly mixed the eggs with sugar until they were very thick and light. Only then did I add the flour with almonds and oil. Remember not to mix the batter with flour for too long afterward, so it doesn’t lose its fluffiness.

Cherry cake calories
How many calories does cherry cake have? With the ingredients I used, 100g of the cake had about 288 kcal. But if you cut the cake into 20 pieces (as I did), one piece will only have about 245 kcal. Therefore, you can eat a piece of cake without any guilt. Especially since the cake is filling, and one piece is enough to feel satisfied.
