- zest of one orange
- 240 g wheat flour – all-purpose (- 1 and 2/3 cups)
- 1 teaspoon baking powder
- 2 teaspoons gingerbread spice
- 100-150 g chocolate (- I used dark chocolate – chopped)

How to make simple gingerbread cookies with chocolate
- Transfer the softened butter and powdered sugar to a large bowl.170 g butter, 170 g powdered sugar
- Zest the orange peel into the bowl.zest of one orange
- Beat the ingredients together until the mixture is fluffy and light in color.
- Gradually add the flour with baking powder and gingerbread spice – mix until combined.240 g wheat flour – all-purpose, 2 teaspoons gingerbread spice, 1 teaspoon baking powder
- Finally, add the chopped chocolate and mix with a spatula.100-150 g chocolate
- Scoop portions of dough with a spoon and roll them into walnut-sized balls in your hands.
- Arrange the cookies on a large baking sheet (leave space between them).
- Gently flatten the cookies with your hand.
- Place the baking sheet with gingerbread cookies into the oven preheated to 190 degrees Celsius (top/bottom heat mode) and bake for about 15 minutes (if baking two sheets at once, you can swap their positions halfway through baking).
- The cookies will still be slightly soft immediately after baking, so do not remove them right away. They will become crispy after cooling.

Cookies with chocolate chips and orange – notes
I recently got into the Christmas spirit by reading the book “12 Dates of Christmas” by Jenny Bayliss. The main character of the book loved to bake and prepare sweet treats. I myself dreamed about the descriptions of chocolate truffles and nutty brownies. At the end of the book, it turned out that the author included several recipes for Christmas baked goods. Unfortunately, there was no recipe for those delicious truffles, but there was a recipe for these very shortbread spiced cookies. I decided to try it, and the cookies turned out so delicious that I’m passing the recipe on to you. So if you were looking for a proven and tested spiced cookie recipe, you’ve come to the right place :)

What ingredients for simple spiced cookies?
To prepare these cookies, you won’t need any unusual or hard-to-find ingredients. All of them are easy to buy, or you might even have them at home already. I prepared my cookies with the following products:
- butter – I used extra butter with 82% fat content here; the butter should preferably be soft and at room temperature. So remember to take it out of the fridge beforehand.
- sugar – I used powdered sugar because I prefer it for mixing with butter over regular sugar.
- gingerbread spice mix – I recommend a good quality gingerbread spice mix here. Be sure to check its ingredients before adding it to the cookie dough. If flour or sugar is listed first in the ingredients, the spice mix will not be very aromatic. As every year, I highly recommend preparing homemade gingerbread spice mix, which contains only spices, without unnecessary additives such as flour, cocoa, or sugar.
- chocolate – I used dark chocolate here because the cookie dough itself is quite sweet. If you like very sweet cookies, you can add milk chocolate, or a little of both.
- orange – I added grated orange zest to the spiced cookie dough; the larger the fruit you have, the more aromatic the cookies will be :)

How to prepare simple spiced cookies – tips
The cookies themselves are very simple and quick to make. You could say they are express spiced cookies. The most important thing is to cream the butter and sugar well – that’s why I like to use powdered sugar here. Soft butter mixed with powdered sugar quickly becomes very fluffy and light. If you’re mixing it with regular sugar, you need to mix it longer – ideally until you no longer feel sugar crystals. Mix the flour into the dough very briefly – just until combined, and stir in the chopped chocolate with a spoon. Take small portions of dough – roughly enough to form a ball the size of a walnut. Arrange these balls with spaces between them, as the cookies will spread slightly during baking. Remember to lightly flatten the balls – just press them gently with the palm of your hand. If you wish, you can additionally sprinkle the tops of the cookies with extra chopped chocolate.

How to bake shortbread cookies with chocolate and orange?
Bake the cookies in an oven preheated to 190 degrees Celsius (top and bottom heat mode) for about 15 minutes. If you have cookies on two baking sheets, you can bake them simultaneously – in that case, I recommend changing the baking mode to convection and a temperature of 180 degrees Celsius. Approximately halfway through baking, you can swap the baking sheets’ positions so that the cookies are more evenly baked.
Immediately after baking, the spiced cookies may still be a bit soft – so don’t remove them from the baking sheet right away; let them cool. Then they will become nicely crispy.

Can these shortbread spiced cookies be made vegan?
Yes! These cookies can be very easily made in a vegan version. Simply replace butter with vegetable margarine – also keep it at room temperature. Remember to use vegan chocolate here as well. However, if you can’t find such chocolate in the store, omit it. Such orange spiced cookies will be just as delicious!
How to store chocolate spiced cookies?
These simple spiced cookies are best stored in an airtight container. This could be a cookie tin, a jar with a lid, or a plastic container with a lid. The cookies are best stored for about 7 days – although some individual pieces lasted longer for me and were still delicious. If you want to prepare such spiced cookies with orange zest for the holidays, you can easily bake them a few days in advance – when you still have relatively few things “to handle”.
