- 50 g sugar (- can be with vanilla – 3 slightly heaped tablespoons)
- vanilla extract (- or essence – a few drops)
- 100 g mascarpone cheese
- 60 ml oil (- 1/4 cup)
- 300 g wheat flour – all-purpose (- 2 cups)
- 2 teaspoons baking powder
- 300 ml milk (- mine is 1.5%)

How to make mascarpone waffles step by step
- In a large bowl, place eggs, sugar, vanilla, and mascarpone cheese – blend until combined.3 eggs, 50 g sugar, vanilla extract, 100 g mascarpone cheese
- Add oil and blend briefly.60 ml oil
- Add flour mixed with baking powder alternately with milk and blend briefly until ingredients are combined.300 g wheat flour – all-purpose, 2 teaspoons baking powder, 300 ml milk
- Heat the waffle maker thoroughly – spoon portions of batter and cook until the waffles are nicely browned.
- Serve with your favorite toppings.

Mascarpone Waffles – tips
I found the recipe for waffles with cheese on Instagram some time ago at smyk w kuchni, and as a waffle lover, I decided to try it.
However, I wouldn’t be myself if I didn’t change something ;)
Originally, mascarpone cheese and half a cup of oil are added to the waffle batter. I decided that cheese and oil were a bit too much fat in the batter for me, so I slightly reduced the amount of oil added.
Additionally, I added vanilla and a bit of sugar – it can be vanilla sugar. Vanilla blended nicely with the taste of the cream cheese batter and made the waffles smell and taste wonderful :)

How to make crispy mascarpone cheese waffles?
I prepared the waffle batter with a mixer – first, I blended eggs with sugar, mascarpone cheese, and vanilla. Then I added oil to them, and then flour with baking powder and milk. I added 1/4 cup of oil to the batter – and because of that, I didn’t grease the waffle maker with oil before adding the batter.
After mixing, the batter is quite thick but slightly pourable. It also rises quite a lot in the waffle maker, so don’t pour too much batter, as it might overflow. I know, because it sometimes overflowed for me ;)

What needs to be done for waffles to be crispy?
The basic thing when making waffles is the waffle maker. For waffles to be crispy, the waffle maker must have considerable power – at least 1000 W. Otherwise, the waffles will cook poorly and won’t be crispy. Before pouring the batter, you must turn it on and heat it up beforehand. I even often reheat it between one batch of waffles and the next, so that the plates are very hot.
It’s best to eat waffles right after taking them out – that’s when they are the crispiest. However, if you don’t eat them immediately, don’t place them on the counter/plate, but on a wire rack, individually.
I really like to put the waffles in an oven preheated to 100 degrees Celsius and warm them up for a bit longer – then they are all super crispy and the whole family can eat them together at once – not in batches :)

Let’s be honest – these waffles contain mascarpone cheese, oil, and a lot of flour, and consequently, they must be quite caloric. I got 12 large waffles from this recipe – I have an MPM waffle maker that makes two large rectangular waffles at once. One mascarpone waffle without toppings has a little over 200 calories. Therefore, it’s worth opting for lighter toppings – like fresh fruit :) I ate them with strawberries, raspberries, and whipped cream – after 1.5 such waffles, I was already full :)
