Ingredients for creamed cake
- 225 g butter (soft – at room temperature)
- 150 g powdered sugar (1 cup)
- 2 eggs (size L – at room temperature)
- 450 g wheat flour – all-purpose (3 cups)
- 2 teaspoons baking powder

- approx 1 kg rhubarb (805 g for me after trimming the ends)
- 2 tablespoons potato starch
- 80 g sugar (slightly over ⅓ cup)

How to make rhubarb square cake step by step
Step 1 – preparations
- Take out the cake ingredients from the fridge in advance – especially butter and eggs, so they warm up to room temperature.225 g butter, 2 eggs
- Line the baking pan with baking paper or grease it with butter and dust with flour.
- Wash the rhubarb and cut off the ends from both sides. Cut the rest of the stalk into pieces about 1.5 cm wide.approx 1 kg rhubarb
- Transfer the rhubarb to a bowl and add the remaining ingredients – mix thoroughly.2 tablespoons potato starch, 80 g sugar
- Turn on the oven to top-bottom heating at 180℃ or convection at 170℃.
Step 2 – preparing the creamed cake dough
- Mix together the flour and baking powder.450 g wheat flour – all-purpose, 2 teaspoons baking powder
- Transfer butter and sugar to a large bowl – start beating with a mixer on high speed.225 g butter, 150 g powdered sugar
- Beat for about 3 minutes – until the mixture becomes light and visibly fluffy.
- Reduce mixer speed and add one egg at a time and a little flour – mix briefly on low speed – just until combined.2 eggs
- Add the remaining flour in portions and mix briefly.
- Stop mixing when there are still remnants of flour visible – then just mix in the dough with a spoon – the dough will be thick!
Step 3 – layering the cake
- Spread about half of the dough evenly on the bottom of the prepared pan.
- Spread the rhubarb filling over the dough.
- Spoon portions of the remaining dough over the rhubarb, then gently spread it out.
Step 4 – baking the cake
- Place the pan with the cake into the preheated oven and bake for about 40-45 minutes – until a wooden skewer comes out clean.
- After baking, cool the cake, and before serving, sprinkle with powdered sugar or drizzle with glaze.

Why bake rhubarb square cake?
I prepared this cake for my sister’s visit and half of it disappeared before she even arrived :) The cake is super delicious, nicely fluffy, and slightly moist thanks to the generous amount of rhubarb. Additionally, the rhubarb adds tartness to the cake, so the whole thing isn’t too sweet, but perfectly balanced. If you prefer sweeter cakes, you can prepare icing at the end and drizzle it over the cake after baking and cooling completely. Then the whole thing will gain more sweetness. For me, sprinkling the cake with a little powdered sugar was enough.
Remember one very important thing – this is a creamed cake, so all ingredients added to the cake itself MUST be at room temperature. So take them out of the fridge beforehand!

What ingredients are essential for baking creamed rhubarb cake?
To make such a quick rhubarb cake at home, you will only need a few basic products. Below is a shortened list of products I used and possible substitutes.
- butter – I used extra 82% butter, you need it to be soft and at room temperature, so take it out of the fridge well in advance, you can ultimately substitute it with mixed butter or vegetable butter
- wheat flour – I used wheat flour type 500, you can also use flour 450 or 550
- potato flour – you need to add some starch to the rhubarb to thicken the juices produced during baking, you can also use regular starch here – potato or corn, ultimately it can also be regular wheat flour

Can other fruits be added to this recipe?
Yes, the basic recipe can be modified by adding other seasonal fruits. Strawberries, blueberries, or apples, among others, go well with this type of cake. However, it is worth remembering that the fruits should not be too watery, as they can heavily soak the cake and lead to a soggy bottom. So choose firm and less juicy fruits.

Young, thin rhubarb stalks do not require peeling. However, if the rhubarb has a thick, tough skin or is more mature, it is worth removing it to give the cake a more delicate texture. Before adding to the cake, rhubarb should be thoroughly washed, dried, and cut into smaller pieces.
How to store rhubarb cake?
The finished rhubarb square cake is best stored in an airtight container or covered with cling film. It can be kept at room temperature for 1-2 days or in the refrigerator for up to a week. Before serving, it’s worth letting the cake sit at room temperature for at least 30 minutes after taking it out of the fridge, so that it warms up and becomes soft.
Can rhubarb cake be frozen?
Yes, creamed rhubarb cake can be frozen. It’s best to divide it into portions, wrap it carefully, and store it in the freezer for up to several months. After thawing, it’s worth leaving it at room temperature to regain its fluffiness.
How to check if the rhubarb cake is baked?
The best way to check is with a wooden skewer. If, after inserting it into the center of the cake, the skewer comes out dry or with only a few crumbs, it means the cake is ready.
How to make icing for rhubarb cake?
If you want to additionally drizzle the cake with icing, simply mix about 150-200 g of powdered sugar (1 – 1 and 1/3 cups) with a little water or milk. Add water to the sugar one tablespoon at a time and mix until you get a smooth and fairly thick icing. Then spread it over the cake.
How many calories are in one serving of cake?
If you divide the cake into 16 roughly similar portions, one such piece will have about 261 kcal.
