Today I invite everyone to try a delicious strawberry blondie. Blondie cake is the “white” version of the popular brownie. This time, I baked this simple cake with pieces of juicy strawberries, which gave the cake an extraordinary taste and moistness. The cake will be perfect for dessert, as well as for a picnic or a holiday trip. I highly recommend it!

- 200 g butter (softened)
- 150 g sugar (- 3/4 cup)
- 1 egg (size L)
- 2 tablespoons lemon juice
- 300 g wheat flour – all-purpose (- 2 cups)
- 0.5 teaspoons baking powder
- 60 ml milk (- mine is 1.5%)
- approx. 200 g strawberries (- cut into larger pieces)

How to make strawberry blondie cake
- Cream the butter with sugar until fluffy (if you use powdered sugar, it will be much faster).200 g butter, 150 g sugar
- Add the egg and lemon juice to the butter – mix briefly.1 egg, 2 tablespoons lemon juice
- Add milk and mix briefly.60 ml milk
- Combine the flour with baking powder and add in portions to the butter mixture – mix briefly – just until combined (some flour remnants may still be visible).300 g wheat flour – all-purpose, 0.5 teaspoons baking powder
- Add the chopped strawberries and gently mix.approx. 200 g strawberries
- Transfer the batter to the prepared pan.
- Bake in an oven preheated to 170 degrees Celsius (fan-assisted) for about 35 minutes – until a skewer comes out clean.
- After baking, let the cake cool.

Blondie cake with strawberries – notes
During strawberry season, I have to bake a delicious cake with these tasty fruits.
Now I’ve opted for an American-style cake, which is a blondie.
What is a blondie?
A blondie is like a “sister” to a brownie. Brownies are chocolatey – with chocolate or cocoa. Blondies, as the name suggests, are light like a blonde. Here you can use white chocolate, but the cake can also be completely without chocolate. This way you will get a rather low cake, but with a dense consistency. Blondie cake is not fluffy, but a bit more sticky – this is due to a very small addition of leavening agents. I only added half a teaspoon of baking powder to the cake, and that’s how it should be.

How to make strawberry blondie – tips
The base of this cake is butter creamed with sugar. Therefore, the butter should be soft. It’s best to take it out of the fridge two hours beforehand so it can warm up and soften.
You can mix the butter with regular sugar, or for example, cane sugar (it will give the cake an additional slightly caramel flavor). Due to its crystalline form, you need to mix the butter longer here so that the sugar dissolves. I prefer to use powdered sugar here, because then the butter is quickly mixed (if you use powdered sugar, use 1 cup – which is equivalent to about 150 g).
It’s worth choosing firm strawberries for the blondie cake, as they will be mixed with a rather dense batter. Soft and slightly crumbling fruits will break down even more during mixing, and after baking, you won’t see nice pieces of fruit.
For a light flavor, I added lemon juice to the cake. If you don’t like it or don’t have it (you can also use “lemon essence”), add more milk instead. For flavor, you can also use a little vanilla or cream aroma.

How many calories does blondie cake with strawberries have?
In the recipe, I provided the calorie count for 100 g of cake, and 100 g of strawberry blondie has about 330 calories. However, you can divide the cake into about 24 portions, which means one piece has roughly half the calories! This is great news, especially for people on a calorie-restricted diet.
Be sure to bake such a strawberry blondie, and when strawberries are out of season, you can replace them with raspberries, for example. I suggest not adding them directly to the batter, as they will break apart; instead, arrange them on top of the cake and gently press them down if desired.
