Texas Sheet Cake Recipe

- 250 ml water
- 340 g wheat flour – all-purpose (- 2 and 1/4 cups)
- 1 teaspoon baking soda (- can be replaced with 2 slightly heaped teaspoons of baking powder)
- 300 g sugar (- 1.5 cups)
- 120 ml natural yogurt (- I used thick Greek yogurt)
- 3 eggs (- mine were size L)
- vanilla extract (- optional)

- 150 g powdered sugar (- 1 cup)
- 2-3 tablespoons milk (- or to desired consistency)

How to make Texas yogurt cake
- Place water and butter in a saucepan and heat until butter is melted.200 g butter, 250 ml water
- Meanwhile, in a large bowl, mix together baking soda (or baking powder) and sugar.340 g wheat flour – all-purpose, 1 teaspoon baking soda, 300 g sugar
- Pour in the hot water with butter and mix thoroughly with a spoon.
- Add natural yogurt and vanilla extract (if using) and mix with a spoon.120 ml natural yogurt, vanilla extract
- Crack in the eggs and mix vigorously – a spoon is enough.3 eggs
- Pour the batter into the prepared pan and place in an oven preheated to 180 degrees Celsius (top/bottom heat).
- Bake for 30-40 minutes – until a skewer comes out clean.
- After baking, let the cake cool.
How to make cake glaze
- Pour powdered sugar into a bowl and add two tablespoons of milk – mix.150 g powdered sugar, 2-3 tablespoons milk
- If the mixture is too thick, add a little more milk.
- Spread the prepared glaze over the top of the cake.
- Store the cake in an airtight container or wrap the pan with the cake in plastic wrap. This will keep the cake fresh longer.

Texas Sheet Cake – tips
I invite you to a new recipe for Texas sheet cake.
For our last running trip to the Bieszczady Mountains, I was looking for a nice and quick cake that wouldn’t spoil from standing, wouldn’t dry out, and wouldn’t go bad.
While browsing photos on Pinterest, I came across a recipe for White Texas Sheet Cake, which is a Texas sheet cake.
I read the recipe, made some modifications, and quickly baked the cake.
Why did I decide to make changes to the recipe?
Americans love very sweet cakes. I already cut down on the amount of sugar in the cake itself. But the most important changes concern the icing. The original recipe calls for an icing made of butter mixed with powdered sugar (4.5 cups of sugar!!). Such a buttercream is not my cup of tea, so I opted for a simple and quick regular icing made from powdered sugar and milk.
Overall, the cake itself turned out very tasty, soft, and springy.
It stayed fresh and moist for a long time – despite standing outside for several days, nothing happened to it and it was still nicely soft. To prevent the cake from drying out, I covered it with cling film.
Everyone really liked this cake, so I can share the recipe without any qualms :)

How to make a simple cake with icing?
Texas sheet cake is a very simple and quick cake to make.
First and foremost, it’s a no-mixer cake! Everything just needs to be mixed with a spoon.
Besides a spoon and a bowl, you’ll also need a pot here, because this cake is a type of scalded cake.
Melt the butter with water and pour it over the flour mixed with sugar.
Then add natural yogurt to the bowl – I used thick Greek yogurt. Finally, add the eggs and mix with a spoon.
Pour the prepared batter into a baking pan lined with baking paper or greased with butter and sprinkled with breadcrumbs.

How long to bake the sheet cake?
I baked my cake for about 40 minutes in top/bottom heat mode at 180 degrees Celsius – you can also bake it in convection mode at 170 degrees Celsius.
It’s best to check with a stick if the cake is baked. I insert a toothpick or a skewer into the very center of the cake, and if, after removing it, the stick has no wet batter on it, it means the cake is well baked and can be removed from the oven.

How to make icing for the cake?
We make the icing for the cake when the cake is completely cooled.
You can make the icing with milk, heavy cream, or lemon juice. Generally, some liquid should be added to powdered sugar to dissolve the sugar. Always add the liquid gradually, spoon by spoon, mix thoroughly, and add more if the icing is too thick.
It’s best when the icing has the consistency of thick cream – then it will spread nicely on the cake and won’t drip off.

Today, I’d like to invite you to try a super simple, super quick, and super delicious Texas sheet cake. In the United States, these cakes are baked in large, flat pans, resulting in a thin, sheet-pan style cake. After baking, the cake is covered in frosting—most commonly a typical American buttercream.
