Today I invite you to try delicious yeast buns with almonds, or more precisely, with an amazing homemade almond paste. The buns themselves turn out wonderfully fluffy and tasty. They are perfect with a cup of coffee, tea, or even cocoa. You must try them!

  • 225 g wheat flour (- 1.5 cups – plus a little for kneading the dough)
  • 2 tablespoons sugar
  • 15 g yeast
  • 1 teaspoon sugar (for the yeast)
  • 1 egg (size L)
  • 80 ml milk
  • 25 g butter (softened – approximately one tablespoon)

How to make yeast dough for buns

  • Heat the milk to lukewarm, add a teaspoon of sugar and crumbled yeast – mix thoroughly, cover and set aside in a warm place for about 20 minutes.

  • In a large bowl, place the flour, the rest of the sugar, egg, and butter. Add the yeast starter and knead the dough.

  • Cover the bowl with the dough with a towel and set aside in a warm place to rise – for about an hour.
  • Once the dough has doubled in volume, transfer it to a lightly floured surface and knead briefly again.
  • Roll out the dough into a thin sheet – about 0.5 cm thick and approximately 20/30 cm in size.
  • Cut the dough into three wide strips, then cut each strip into two pieces.

How to make almond filling for buns

  • Mix the ground almonds with powdered sugar and softened butter (if you don’t have ground almonds, blend whole almonds with powdered sugar in a food processor).

  • Gradually add the lightly beaten egg white – just enough for the mixture to become sticky.

  • To make my work easier, I transferred the almond mixture to a strong piping bag, cut off a corner, and squeezed the mixture onto the dough this way.
  • Place the almond filling in the center of the dough and roll the dough into a log (I cut one side of the dough to a length of about 3 cm and rolled the dough from the smooth edge towards the cut side, so the tops of the buns were slightly cut) – I added a phone photo of the preparations below the recipe.

  • Arrange the buns on a large baking sheet, cover with a cloth, and set aside for 30 minutes to rise.
  • Preheat the oven to 170 degrees Celsius (fan mode or 180 degrees Celsius top/bottom mode).
  • Before baking, brush the buns with an egg mixed with a little milk.

  • Bake the buns for about 15 minutes – until golden brown.
  • After baking, cool.

Almond Yeast Buns – notes

This recipe for almond yeast buns caught my eye in Nigella Lawson’s book “How to Be a Domestic Goddess”.

Recently, I started browsing it again looking for inspiration, and many recipes caught my interest.

As a lifelong admirer of yeast cakes, I was tempted by the almond buns.

I prepared the yeast dough and started on the almond paste for the buns.

How to make almond filling for buns?

The best and quickest way is to use ground almonds here.

Then just mix them with powdered sugar, a little soft butter, and egg white.

If you don’t have ground almonds, then blend whole almonds (preferably blanched) together with powdered sugar until fine.

Then add butter and egg white.

It’s good to lightly whisk the egg white with a fork beforehand – it will be easier to add it in portions (add only enough for the mixture to stick together).

This recipe makes 6 yeast buns, but they are large almond yeast buns.

One has a lot of calories (no surprise there), but since they are so big, you can eat half ;)

At the very bottom (under the recipe) I’ve included a photo from the preparation, and you can see that each bun gets a generous amount of filling.

I think you can easily make more dough and share the filling among more buns :)
