- 25 g fresh yeast
- 125 ml milk (cold !)
- 75 g sugar (- 1/3 cup)
- 1 tablespoon cardamom (ground)
- 1 egg ( size L)
- 325 g wheat flour – all-purpose (- 2 slightly heaped cups + for dusting)
- 0.5 teaspoon baking powder
- 0.5 teaspoon salt
- 100 g butter (softened)

- 100 g almonds (- 1 cup)
- 100 g sugar (- half a cup)
- 100 ml milk
- 1 pinch cardamom
ingredients for whipped cream for the buns
- 250 ml heavy cream (well chilled – I used 30%)
- 1 tablespoon powdered sugar
additional ingredients for the buns
- 1 egg
- 1 tablespoon water

How to make yeast dough for semlor buns
- Pour cold milk into the mixer bowl and add yeast – mix until the yeast dissolves.125 ml milk, 25 g fresh yeast
- Add sugar, flour, baking powder, salt, egg, cardamom, and soft butter in pieces to the bowl.75 g sugar, 1 egg, 325 g wheat flour – all-purpose, 0.5 teaspoon baking powder, 0.5 teaspoon salt, 100 g butter, 1 tablespoon cardamom
- Knead the dough – it will be sticky, but do not add more flour.
- Cover the bowl with the dough and set aside for 10 minutes.
- Lightly dust the counter with flour, take out the dough and knead briefly.
- Divide the dough into 9 portions – you can also divide it into 8.
- Form a bun from each portion.
- Arrange the buns on a baking sheet lined with parchment paper – leave space between the buns.
- Cover the buns with a cloth and set aside for 60-90 minutes to rise.
How to make almond filling for semlor buns
- While the buns are rising, prepare the almond filling.
- Preheat the oven to 200 degrees (top/bottom heat).
- Spread the almonds on a baking sheet and bake for about 8 minutes.100 g almonds
- After this time, remove them from the oven and let them cool.
- Put the cooled almonds into a food processor, add sugar and milk – blend everything together to form an almond paste.100 g sugar, 100 ml milk
- Increase the oven temperature to 225 degrees (top-bottom mode).
- Whisk the egg with a fork together with a tablespoon of water.1 egg, 1 tablespoon water
- Brush the tops of the buns with egg.
- Place the buns in the oven and bake for about 12 minutes.
- After baking, let the buns cool.
Semlor buns – finishing
- Cut off the tops of the buns and lightly hollow out the centers.
- Add the hollowed-out dough to the almond filling and combine thoroughly.
- Spoon the almond filling into the hollowed-out buns.
- Whip the heavy cream with powdered sugar until thick.250 ml heavy cream, 1 tablespoon powdered sugar
- Transfer the whipped cream to a piping bag with a star nozzle.
- Pipe the whipped cream onto the tops of the buns.
- Cover the buns with the cut-off tops and finally sprinkle with powdered sugar.

What are semlor buns?
Semlor buns are popular yeast buns in Sweden and throughout Scandinavia, filled with almond paste and decorated with whipped cream. Most of them are eaten on the Tuesday before Ash Wednesday (Fat Tuesday), but they are also eagerly consumed throughout the carnival period. I had wanted to try a semlor recipe for some time, but something always held me back. Fortunately, this year I made it perfectly, because Fat Tuesday is tomorrow! To be sure I was making the buns from the best recipe, I checked out the Swedish blog Call Me Cupcake. I used Linda’s recipe and baked these aromatic cardamom buns. Now you too can bake such Swedish buns with almonds.

How to make semlor buns – tips
You will need yeast, almonds, cardamom, and heavy cream for them. The other ingredients are standard and you will have them at home. The almonds should be toasted in the oven (or in a pan), then blended with sugar and milk to make an almond paste. If you don’t have a food processor, I suggest using ground almonds directly (you don’t toast these beforehand). The heavy cream should be whipped until thick, transferred to a piping bag with a star nozzle, and piped onto the buns. If you don’t have piping nozzles at home, just spoon the whipped cream on. It won’t affect the taste of the semlor pastries ;) If you can’t find cardamom anywhere, it’s okay, make the buns without it.
I am convinced that you will enjoy these Swedish semlor buns. Although I must admit that eating them without making a mess can be a challenge :)
