I recommend eating it after it has cooled down slightly, but still a little warm. For me, there’s no better cake! - 20 g yeast (fresh)
- 1 teaspoon sugar (for yeast)
- 120 ml milk (lukewarm)
- 300 g wheat flour – all-purpose (2 cups)
- 50 g sugar (1/4 cup)
- 2 eggs (size L)
- 30 g butter
- approx 800 g roasted apples

- 150 g wheat flour (1 cup)
- 100 g butter
- 70 g sugar (1/3 cup)

How to make yeast cake with roasted apples step by step
Step 1 – prepare the yeast starter
- Crumble the yeast into a bowl, add sugar and mix together.20 g yeast, 1 teaspoon sugar
- Pour in lukewarm milk (not too hot!) and mix until the yeast dissolves.120 ml milk
- Cover the bowl with cling film or a cloth and set aside in a draft-free place for about 20 minutes.
Step 2 – prepare the yeast dough
- In a large bowl, place wheat flour, sugar, eggs, butter cut into pieces, and pour in the yeast starter.300 g wheat flour – all-purpose, 50 g sugar, 2 eggs, 30 g butter
- Knead the dough with a mixer or by hand – it will be quite sticky.
- Cover the bowl with the dough with foil or a cloth and set aside in a warm place for about an hour – until it rises and doubles in volume.
- Briefly knead the risen dough again.
- Transfer it to the pan and spread it over the entire bottom with slightly damp hands.
- Spread the apples over the dough evenly.approx 800 g roasted apples
Step 3 – prepare the crumble topping
- From flour, butter cut into pieces, and sugar, prepare a loose crumble – you can briefly mix it with a food processor, knead with a fork, or crumble with your fingers..150 g wheat flour, 100 g butter, 70 g sugar
- Sprinkle the crumble over the top of the cake.
- Cover the pan with the dough with a cloth and set aside for about half an hour to rise.
Step 4 – bake the cake
- While the dough is rising in the pan, preheat the oven to 170 degrees (convection mode) or 180 degrees (top/bottom heat).
- Place the pan with the dough into the hot oven and bake for about 35-40 minutes – until a dry skewer comes out clean.
- Cool the cake after baking.

Yeast cake with apples and crumble – notes
I love yeast cakes, and every now and then I bake a large tray of some yeast cake and eat most of it myself ;) Because, well, I just can’t resist a delicious yeast cake. Recently, I got a craving again and baked a super simple, very rustic-looking and tasting yeast cake with apples and crumble. I used roasted apples from a jar here – to make it quicker and to use up my apple preserves. A cake baked with a lot of apples and topped with sweet crumble was a real hit! By the way, my husband shared it with his colleagues at the ultramarathon in Wieliszew, so I can say I had a hand in their finished run :)

What ingredients are essential for baking a yeast cake with apples?
To bake this apple cake, you will need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.
- yeast – I prepared my dough with fresh yeast – because I like working with it. Can you make a yeast cake with apples using dry yeast? Of course, for this cake, a packet of instant yeast (about 7 g) will suffice.
- milk – you will need milk for the yeast; mine is regular 1.5% UHT milk, you can also use milk with a different fat content, or substitute it with a plant-based drink
- wheat flour – I used type 500 wheat flour here, you can also use type 550 flour or, as a last resort, type 450, all-purpose flour will be good, too.
- apples – for my baking tray, I used a whole large jar of roasted apples; mine weighed about 800 g

What to do if my yeast dough doesn’t rise?
If your yeast dough doesn’t rise, there could be several reasons. The main reasons are usually:
- Yeast – if you use fresh yeast and dissolve it in milk that is too hot, you can “kill” it, and then the dough won’t rise. If the yeast starter isn’t foamy and hasn’t increased in volume after about 20 minutes, it’s best to prepare a new batch. Either the yeast was too old, or it overheated.
- Yeast dough rises in a draft or in cool conditions – yeast dough will even rise in the refrigerator, but it will need much more time. If you want to prepare it quickly, place the covered bowl with the dough in a warm place where there are no drafts. I like to put it in the oven. On colder days, I even turn it on to about 30 degrees – then the dough rises very quickly. If the dough still hasn’t risen, it’s best to add a little more yeast, knead it, and set it aside to rise.

How many calories does a yeast cake with apples and crumble have?
In the table below the recipe, I provided the caloric value for 100 g of cake. If you divide it into approximately 24 equal portions, one piece of cake will have about 165 kcal (carbohydrates – 24 g, fats – 6 g, proteins – 3 g).
