Alpine apple pie is a sensational cake with apples in lemon jelly served on a fluffy sponge cake. The whole is topped with a cap of whipped cream and chocolate shavings.   • 50 g wheat flour – all-purpose (- 1/3 cup)

  • 2-3 tablespoons powdered sugar (or to taste)
  • 1 teaspoon gelatin (+ a little water – optional)
  • 100 g chocolate (grated – for decoration)

How to make sponge cake for apple pie

  • Mix the egg whites with sugar into a thick, white, and fluffy mass.

  • Sift the flour through a sieve together with the potato starch.

  • Add the egg yolks to the egg whites and mix briefly or blend on low speed.

  • Add the flour and mix gently.

  • Line the bottom of the baking pan with parchment paper.
  • Spread the sponge cake mixture and level the surface.
  • Bake the sponge cake in an oven preheated to 170 degrees Celsius (fan-assisted) for about 10-12 minutes – until a dry skewer comes out clean.
  • After baking, cool the sponge cake.

How to make apples for apple pie

  • Peel the apples, cut them into quarters, and remove the core.

  • Cut the fruit into larger cubes and transfer them to a large pot.
  • Add water, sugar, and lemon juice – stew the apples for about 10-15 minutes – until soft, but before they fall apart.

  • Meanwhile, prepare the jellies – dissolve them in boiling water.

  • Add the jelly to the apples and set aside to cool and slightly thicken (do not pour the jelly with apples onto the sponge cake immediately!).

  • Spread the thickening apples over the sponge cake (if you wish, you can first soak it with sweetened tea, or sweetened water with lemon juice).

  • Refrigerate the pan so that the mixture sets completely.
  • Meanwhile, prepare the whipped cream – whip the cold heavy cream with powdered sugar until thick.

  • If you want to add gelatin to the cream, pour a small amount of cold water over it and let it sit for a few minutes to swell.

  • Briefly heat the gelatin until it becomes liquid (I put it in the microwave for less than 10 seconds), add a little whipped cream to it to temper the gelatin – mix thoroughly.
  • Pour the gelatin into the rest of the cream and mix briefly.
  • Spread the whipped cream over the apple filling and level the surface.

Alpine apple pie on sponge cake with lemon jelly – notes

Today I invite you to try apple pie on sponge cake with lemon jelly and whipped cream.

This apple cake is very simple to make and the only thing it requires from you is patience :)

You have to wait for the apple jelly to set and firm up before you can get to this cake.

And besides the fact that the apple pie looks absolutely fabulous and tastes heavenly, it has few calories!

Because, in total, the main caloric content comes from whipped cream.

And a slice of cake has about 170 calories – so you can eat two :D

How to make Alpine apple pie on sponge cake – tips

First thing – sponge cake – obviously.

You can make a sponge cake using your favorite recipe for a two-egg sponge cake, or use my simple and reliable recipe, which I’ve included below the photos.

You can bake the sponge cake in advance and store it wrapped in cling film to prevent it from drying out. Before further preparing the cake, first peel the sponge cake from the baking paper, then it will be easier for you to divide the cake into portions and serve it :)

How to make apples for Alpine apple pie?

For this cake, you will need 2 kg of apples – mine, after peeling and removing the cores, weighed about 1.5 kilograms.

Peeled apples, cut into quarters, should be diced into thicker cubes and transferred to a larger pot.

Add a little water, lemon juice, and sugar to the apples and simmer for about 10-15 minutes. Just enough for the fruit to soften, but not yet fall apart. That’s why firmer apples will be better here.

While the apples are stewing, dissolve the lemon jellies in hot water and then add them to the apples.

I put the pot with apples on the balcony so that the jelly would set faster. Do not immediately spread the apples with jelly onto the sponge cake, as all the jelly might run off! The apple mixture must already be thickening before you spread it onto the sponge cake.

Should the sponge cake be soaked under the apple pie?

I didn’t soak it because it absorbed a little moisture from the apples in the jelly (I served the cake only after a night in the fridge, and the sponge cake had time to absorb moisture from the filling). However, if you like soaked sponge cakes, or have less time for the cake to set, you can certainly soak it. I recommend water with lemon juice and sugar here – for a glass of warm water, use two teaspoons of sugar and roughly one teaspoon of lemon juice. You can also soak the cake with light tea with lemon, and if only adults will be eating the cake, you can add a little rum to it :)

How to make whipped cream for the cake?

To make whipped cream, you need very cold heavy cream. As usual, I used 30% cream in a carton, but you can also use 36% cream (then the caloric content of the cake will change slightly). If the cream is not very cold, you won’t be able to whip it. Additionally, for stability, you can add a little gelatin to it, or if you use it – whipped cream stabilizer.

How to decorate Alpine apple pie?

You can sprinkle grated chocolate on top of the whipped cream – just grate it. You can also use chocolate sprinkles available in stores. If you wish, you can make larger chocolate shavings like those seen in my photos.

How to make chocolate shavings for the cake?

You will need a very cold flat surface – I use a regular smooth bathroom tile, which I chill in the freezer. A marble or glass cutting board will work just as well. You chill it in the freezer, and in the meantime, you melt chocolate in a double boiler – I use dark chocolate.

You pour the chocolate onto the chilled board and spread it in a thin layer, wait a moment for the chocolate to cool, and then use a sharp knife to scrape it off, creating large shavings :) You sprinkle the top of the apple pie with this chocolate, divide it into portions, and serve it to guests.
