How to make no-bake apple cake step by step
- Prepare the semolina cream – boil the milk with semolina and cook until the mixture thickens – it will be roughly the consistency of a loose pudding. Set aside the cooked semolina to cool – preferably at room temperature.1 liter milk, 100 g semolina
- Beat the soft butter with powdered sugar until a white and fluffy mass is formed – beat for a long time – until the butter increases its volume and turns almost white, pale in color.200 g butter, 65 g powdered sugar
- Add ground almonds to the butter and then semolina, one tablespoon at a time – mix briefly until the ingredients are combined.25 g ground almonds
- If the cream is not sweet enough for you, you can add more powdered sugar.
- Pour cold water over the gelatin and set aside to swell, then heat.3 teaspoons gelatin
- Add some stewed apples to the gelatin and mix – pour the entire mixture into the rest of the apples and stir vigorously.about 1.4 kg apples
- Line the bottom of a baking pan approximately 20/30 cm in size with a layer of biscuits (for me, it was about 20 biscuits per layer).about 480 g biscuits
- Spread half of the semolina cream over the biscuits, and then another layer of biscuits on top.
- Spread the apples and smooth the surface.
- Layer biscuits over the apples again, then the rest of the semolina cream, biscuits, and dulce de leche.1 can dulce de leche
- Finally, sprinkle the cake with almonds.1 handful almonds
- Chill the entire cake in the refrigerator overnight.

Apple and dulce de leche cake – notes
I love apple cakes, but I rarely have the pleasure of making or eating a no-bake apple cake. And that’s exactly what this apple square with dulce de leche is. Here we have biscuits layered with apple filling, semolina cream, and dulce de leche. The whole thing is delicious and not too sweet at all (unless your stewed apples are very sweet). The cake tastes best on the second day, when the biscuits soften from the cream. So you have to be patient. And it’s worth waiting, because this square is delicious and, all in all, not as caloric as it might seem.

How to make apple pie with semolina cream – tips
It’s best to start preparing this cake by making the semolina cream. What is semolina cream? This is a cream based on semolina. Cook the semolina for the cream in milk and set aside to cool to room temperature!
Beat the butter for the cream with sugar until it’s nicely fluffy and almost white – I usually beat it for about 10 minutes. Then add the cooled semolina, one spoonful at a time, and mix until combined. Here, the cream preparation is similar to making pudding cream. Use the prepared cream to layer the biscuits.

What apples for apple pie?
I recommend using ready-made stewed apples here. For the cake, you will need about 1.5 kg of stewed apples – or 2 large jars of stewed apples from the store. If you have homemade ones, you can, of course, use those. To make the apple filling more stable, add gelatin to it and spread it over a layer of biscuits.
Put the finished cake in the fridge for a few hours, or preferably overnight. During cooling, the apple filling and cream will set more, and the biscuits will soften, making the apple square with dulce de leche easier to cut into portions.

How many calories does apple and cream cake have?
Despite using dulce de leche and semolina cream, this apple square doesn’t have that many calories – thanks to the apples, which significantly lower the cake’s caloric content. My cake had about 190 calories per 100g, which is very, very good :)
