- 200 g powdered sugar (- 1 and 1/3 cups)
- 4 egg yolks (from size L eggs)
- 4 egg whites
- 300 g wheat flour (- 2 cups)
- 2 teaspoons baking powder
- 4 peaches (medium – mine weighed about 400 g)

How to make buttery peach cake
- Pour boiling water over the peaches and let stand for a few minutes.4 peaches
- Cream the butter with powdered sugar until white and fluffy – I usually cream for about 10 minutes.200 g butter, 200 g powdered sugar
- Meanwhile, remove the peaches from the water and peel their skin.
- Cut the fruit into smaller pieces.
- Sift the flour with baking powder through a sieve.300 g wheat flour, 2 teaspoons baking powder
- Add the egg yolks to the creamed butter and mix briefly.4 egg yolks
- Gradually add the flour and mix only on low speed – stop mixing when there are still visible traces of flour.
- Whisk the egg whites with a pinch of salt until white and very stiff.4 egg whites
- Add the egg whites to the batter and gently mix with a spoon.
- Grease a baking pan of about 22 cm with butter and sprinkle with breadcrumbs.
- Transfer the batter to the pan and level it.
- Arrange the sliced peaches on top.
- Bake at 170 degrees Celsius (fan mode) for approximately 50-55 minutes – until a wooden skewer comes out clean.
- After baking, cool the cake and remove it from the pan.

Fluffy peach cake – notes
I recently had a strong craving for some cake and baked us this buttery peach cake.
The recipe itself is very easy and contains only basic ingredients.
To make it, you will need soft butter, sugar, flour, eggs, and of course, peaches.
I took advantage of the season and used fresh peaches.
First, I peeled them, and then I divided them into wedges.
Out of season, you can use canned fruit.
This creamed cake will also taste great with other fruits – e.g., sliced apples or plums.

How to make a creamed butter cake – tips
Cream soft butter with sugar (I used powdered sugar for speed), then add only the egg yolks and flour with baking powder.
When making creamed cakes, remember not to mix the batter for too long after adding the flour.
Mix until there are still visible traces of flour!
Then, the batter should only be stirred with a spoon.
Whip the egg whites into a foam and add to the batter – mix gently with a spoon.
Transfer the batter to a mold, and arrange the fruit on top.
I baked the cake in a medium springform pan (22 cm), which made it tall and fluffy.
You can also bake it in a larger rectangular baking pan (e.g., 20/30 cm); in that case, the cake will be lower but more “divisible” (easier to portion).
If you want to bake this buttery peach cake in a larger pan, shorten the baking time to about 30-35 minutes.
