    Step 1 – preparations

    • Wash and pit the cherries (remove the stones).

    • Heat the heavy cream and add the broken chocolate to the hot cream – mix thoroughly and set aside to cool.

    • Turn on the oven to heat to 150 degrees in top-bottom mode. Place a sealed form filled with water at the bottom of the oven.
    • Line the baking pan with baking paper, or grease it with butter and sprinkle with flour or breadcrumbs.

    Why is it worth baking this creamy cheesecake with cherries?

    I must admit that no cheesecake has tasted this good to me in a long time. While taking photos and removing it from the mold, I already ate three slices, which practically never happens to me. But I couldn’t resist it. I got to it when it had only been chilling for about 3 hours, so it was still very delicate. After a night in the fridge, the chocolate in it allowed the cheesecake to gain more density and stability. And the cheesecake itself turned out super creamy, nicely chocolatey, and delicious thanks to the juicy cherries and crunchy cookies. You absolutely must try this recipe!

    What ingredients are needed to bake a chocolate cheesecake?

    To make such a homemade creamy chocolate cheesecake, you will only need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.

    • quark/curd cheese – here I used Mój Ulubiony cheesecake quark from Wieluń, it’s a fatty and caloric quark, but of very good quality; besides that, I also recommend Piątnica cheesecake quark. When buying quark, look at its calorie content – if it has 200 or more calories per 100g, it will be good
    • chocolate – I used dessert chocolate, you can also use dark chocolate if you prefer more chocolatey and intense-tasting cheesecakes; you can also use milk chocolate, but if you don’t want a too sweet cheesecake, then reduce the amount of sugar to 200 g (1 cup) and dissolve the chocolate in only 200 ml of cream instead of 250
    • pudding powder – I used sugar-free chocolate pudding powder, but if you don’t have it, you can use vanilla or cream pudding powder, or add regular wheat flour
    • cookies – for the cheesecake, I used Neo brand sandwich cookies from Lidl, you can also use Oreo cookies, or other sandwich cookies, as well as regular chocolate biscuits (then add a little more melted butter to them); I bought two packages of cookies here and so they wouldn’t go to waste, I also ground the remaining ones and sprinkled them on top of the cheesecake – this way they formed a kind of crumble :)

If you divide the cheesecake into 24 pieces, each of them will be almost 100g and will have about 323 kcal.
