  • 250 g chocolate biscuits (finely crushed or ground)
  • 100 g butter (melted)
  • 1 kg cheesecake cheese (full-fat, good quality (I recommend Piątnica, Mój Ulubiony))
  • 5 eggs (size L)
  • 300 g sugar (1.5 cups)
  • 120 g natural yogurt (I used Greek)
  • 80 ml orange juice (from one large orange in my case)

  • 200 g chocolate (- dark in my case)
  • 125 ml heavy cream

How to make chocolate cheesecake on a biscuit base

  • Mix the ground biscuits with butter and press them into the bottom of the baking pan.

  • Heat the heavy cream in a saucepan, add the broken chocolate and stir until melted. Let it cool.

  • Transfer the quark cheese to a large bowl, add sugar, eggs, orange juice, orange zest, and yogurt.

  • Blend until the ingredients are combined.

  • Add the cooled chocolate to the quark cheese mixture and blend until combined.

  • Pour the chocolate cheesecake mixture onto the biscuit base.

  • Bake the chocolate cheesecake in an oven preheated to 150 degrees Celsius (top/bottom heat mode) for about 80-90 minutes.
  • After baking, turn off the oven, but leave the cheesecake inside until the oven cools down.
  • Then put the chocolate cheesecake in the refrigerator for at least 4 hours.

How to make chocolate ganache for chocolate cheesecake

  • Heat the heavy cream in a larger pot, add a little extract if you are using it.

  • When it’s hot, add the chopped chocolate to it.

  • Stir until the chocolate melts and you get a smooth mixture.

Cheesecake with orange and chocolate – notes

I spotted this chocolate cheesecake with orange earlier on The Loopy Whisk blog and prepared it for Christmas (I’m sharing my version of the recipe here). I baked it in a large pan, enough for two households. I must admit that I really enjoyed this cheesecake – probably thanks to its rich chocolate flavor. This is because I used a total of 700g of dark chocolate to make this chocolate cheesecake. So if you like bold chocolate cakes, you absolutely must try this recipe!

Ingredients needed to prepare chocolate-orange cheesecake

To bake a chocolate cheesecake, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.

  • quark/curd cheese – the base of cheesecake is, of course, quark. I bake my cheesecakes with thick, full-fat quark, then I’m guaranteed that it will turn out nice and won’t sink. When buying quark in a store, pay attention to the fat content – it’s best to choose one with a fat content above 10 percent – I recommend Piątnica quark for cheesecakes (it has 18%) or Mój Ulubiony.
  • chocolate – for my cheesecake, I used only dark chocolate – 7 bars of 100g each. Now, many manufacturers have reduced the weight of chocolate bars to 90g or even 80g as a cost-saving measure. I recently buy chocolate from Lidl or Biedronka; they still weigh 100g and are of good quality. If you prefer sweeter cakes, you can use milk chocolate for the cheesecake itself and dark chocolate for the ganache on top. However, if you prefer to use milk chocolate everywhere, reduce the amount of heavy cream for the chocolate ganache to 500 ml.
  • oranges – for an orange flavor, I added the zest of one large orange and its squeezed juice to the cheesecake. I also added a touch of almond extract to the chocolate ganache.
  • heavy cream – I used cream in a carton with 30% fat content. You can also use 36% cream – then the calorie content of the cheesecake will slightly change.

How to make chocolate-orange cheesecake – tips

Preparing chocolate cheesecake is extremely simple, and I think everyone can easily handle it. What to do so that the cheesecake doesn’t sink after baking?

I always follow a few tips – first, good quality quark. Lean and watery quarks for cheesecakes hold their structure less well and are more delicate. Second, I don’t add beaten egg whites to the cheesecake. I add whole eggs directly to the cheesecake batter. Third, short mixing. Do not mix the cheesecake batter for too long, as you don’t want to aerate it. The air forced into the cheesecake expands during baking, causing the cheesecake to rise. After cooling, the air trapped in the cheesecake cools down and reduces its volume, causing the cheesecake to sink. Fourth, proper baking – I will write about this in detail below.

How to make the cheesecake base?

Here, I crushed chocolate biscuits in a food processor and mixed them with melted butter. What to do if you don’t have a food processor or blender? Crumble the biscuits into smaller pieces with your hands and transfer them to a thick bag. Hit the biscuits with a rolling pin until they crumble. Then pour them into a bowl, add melted butter, and mix with a spoon. Transfer the prepared biscuits to the pan and press them down firmly – you can do this with your hand or by pressing with the bottom of a glass.

How to melt chocolate for cheesecake: practical tips

Both the chocolate added directly to the cheesecake and the chocolate for the ganache are prepared in the same way, i.e., in heated heavy cream. I pour the cream into a saucepan and heat it over medium heat. When it is hot – but not boiling – I add the broken chocolate to it. I wait 1-2 minutes and stir until the chocolate is nicely melted and the whole mixture becomes smooth.

How to prepare the cheesecake batter?

As I mentioned above, the chocolate cheesecake batter is prepared quickly and without excessive mixing. I usually transfer the quark to a large bowl and immediately add the remaining ingredients. I mix everything at once and pour it into the baking pan. Here, I first mixed the quark with the basic ingredients and only then added the melted chocolate to it. I didn’t want the chocolate to set too quickly with the cold quark.

How to bake chocolate-orange cheesecake?

To ensure the cheesecake is flat like a countertop after baking, I usually bake it in an oven preheated to 150-160 degrees Celsius, always in top/bottom heat mode. I bake it at a lower temperature but for a longer time. After baking, I also don’t immediately remove the cheesecake from the oven; instead, I leave it inside (with the door closed) until the oven cools down. This provides the cheesecake with slower and more stable cooling without large temperature fluctuations.

Another way to get a beautifully baked and flat cheesecake is to bake it in a water bath. You can also bake this chocolate-orange cheesecake this way. Just properly secure the baking pan so that water doesn’t get into it. You can watch my short video where I show how to bake a cheesecake in a water bath.

How many calories does chocolate cheesecake with orange have?

As you can probably guess, this cheesecake is not one of the low-calorie ones. 700g of chocolate added to the cheesecake does its job ;) Theoretically, 100g of cheesecake has about 340 kcal, so it’s not too bad. But… If you divide the cheesecake into 24 portions, each piece will already have almost 500 kcal. However, you can cut the cheesecake into smaller portions, and one piece will fill you up.

What can you do to lighten up the chocolate-orange cheesecake? As you can see from the photos, the layer of chocolate ganache is thick (and incredibly appetizing), but you can prepare it with half the portion. The cheesecake will taste just as excellent, and its calorie content will decrease.

How to make candied oranges for cheesecake?

If you want to make similar orange slices for your cheesecake as I did, it’s not difficult at all! Scald and thoroughly wash a large orange, then slice it thinly with a knife. In a large pan, pour 200g (1 cup) of sugar and 200ml of water – heat until the sugar dissolves. Then add the orange slices, reduce the heat to the lowest setting, and cook the oranges, turning them occasionally, until the syrup thickens. Remove the cooked oranges and place them on a wire rack – they might stick to it. If you don’t want the oranges to be sticky, you can additionally sprinkle them with regular sugar. Store these orange slices in an airtight container lined with baking paper. Do not stack the slices on top of each other, as they will stick together!
