Recipe for Danish Drømmekage cake with coconut flakes
Recently, the Danish Dream Cake, or Drømmekage, caught my eye. This cake is a soft cake made with milk and melted butter, which is then baked with a coconut layer on top. The cake itself is incredibly simple and made only with basic ingredients. But as always, its strength lies precisely in its simplicity. You absolutely must try it, especially if you are a fan of coconut cakes.

Prepare this incredibly simple yet delicious cake with lightly caramelized coconut flakes for the weekend.

- 300 g sugar (- 1.5 cups)
- 100 g butter (melted and cooled)
- 400 ml milk (- I used 1.5%)
- 500 g wheat flour – all-purpose
- 2 teaspoons baking powder

- 200 g butter
- approx 5 tablespoons milk
- 100 g sugar (- half a cup)
- 200 g desiccated coconut

How to make Drømmekage cake
- Whisk the eggs together with sugar until a thick, fluffy and almost white mixture is formed.5 eggs, 300 g sugar
- Prepare the milk and melted butter, and preferably sift the flour through a sieve together with the baking powder.100 g butter, 400 ml milk, 500 g wheat flour – all-purpose, 2 teaspoons baking powder
- To the beaten egg mixture, alternately add a little flour, milk, and butter.
- Do not mix for too long – just until the ingredients are combined.
- Pour the batter into the prepared pan, place in an oven preheated to 170 degrees (fan-assisted) and bake for 30 minutes.
- After 20 minutes of baking the cake, start making the coconut topping for the cake.
How to make the coconut topping for Drømmekage cake
- Transfer the butter to a saucepan and heat until melted.200 g butter
- Add sugar and milk to the butter and heat until the sugar dissolves.100 g sugar, approx 5 tablespoons milk
- Add the desiccated coconut and mix – if the mixture is too dry, you can add a little more milk.200 g desiccated coconut
- After 30 minutes of baking the cake, open the oven and spread the coconut mixture over the top of the cake – spread it in a more or less even layer.
- Bake the cake for another 15 minutes.

Coconut Drømmekage cake – notes
If you follow me on Facebook or Instagram, you know that I recently completed one of my biggest challenges.
I ran over 52 km during a marathon at the Rzeźnik Running Festival in the Bieszczady Mountains and thus joined the ranks of ultramarathon runners.
This wasn’t my first time participating in this festival. We’ve been going for about 6 years now. At first, only my husband and his friend Michał participated in the runs. Then I joined, and eventually Michał’s wife – Agatka.
This way, at Rzeźnik, I ran Rzeźniczka twice (28 km) and Dycha na Jeleni Skok. Now I’ve added a marathon to that. I had been preparing for the race, more or less diligently, since about September. I trained a lot in my local forest, and there were also trips for training in the Świętokrzyskie Mountains. All of this allowed me to finish the race at a faster pace than I dared to dream, and without any injuries, and even without any particularly strong muscle soreness.

And why am I writing about this here?
Firstly, because I am proud of myself and I think it’s something worth boasting about :) Who knows when I’ll repeat such a feat.
And secondly, because it was for this trip that I baked us this Danish dream cake – the Danish Dream Cake.
The cake traveled all the way to the Bieszczady Mountains without damage and was eaten there for several days.
Everyone was delighted with it, and the cake itself lost nothing of its taste and freshness.
Therefore, I can recommend it to you without any qualms.

How to make Danish Drømmekage cake – tips
We start the coconut dream cake by preparing the base cake. It’s a creamed cake, where eggs are creamed with sugar until very fluffy and almost pale.
The fluffier and stiffer the mixture, the fluffier and lighter the cake will be later.
It’s also worth sifting the flour together with the baking powder through a sieve beforehand.
To the beaten eggs, alternately add a little flour, milk, and melted, cooled butter.
We bake the finished cake – this cake alone is very interesting in taste and texture, and I think it can also be used as a base for a fruit cake. I’ll probably bake it sometime with strawberries or other fruits.
While the cake is baking, we prepare the coconut topping.
It’s a combination of melted butter, sugar, and coconut flakes.
I had very fine coconut flakes, which quickly absorbed the butter.
Spread the topping over the partially baked cake and bake together again.
Because of their fine form, my coconut flakes crumbled a bit when cutting, but that didn’t bother me at all, as I ate them up anyway afterwards.
This coconut cake tastes great on its own, but served with a cup of coffee or tea, it’s simply perfection.
If you keep it in an airtight container, the Danish dream cake will stay fresh for several days.
