- 260 g wheat flour – all purpose (1⅔ cup)
- 2 teaspoon baking powder
- 0,5 teaspoon salt (optional)
- 360 ml heavy cream (very cold)
- 250 g powdered sugar (1⅔ cup)
- 3 eggs (size L – at room temperature)
- vanilla extract (to taste – optional)

How to make a cream cake step by step
Step 1 – preparation
- Sift the flour, baking powder, and salt together through a sieve.260 g wheat flour – all purpose, 2 teaspoon baking powder, 0,5 teaspoon salt
- Grease the baking pan with butter and dust it with flour, or line it with baking paper.
- Preheat the oven to convection mode at 170°C, or top/bottom heat at 180°C.
Step 2 – preparing the cake
- Pour the cream into a large bowl and whip it on high speed with a mixer until you get a thick mixture.360 ml heavy cream
- Then reduce the speed and, while adding the powdered sugar in batches, mix until fully combined.250 g powdered sugar
- Crack the eggs into a small bowl and whisk them together with a fork.3 eggs
- Pour the eggs into the bowl with the cream, add vanilla extract (if using), and briefly mix to combine.vanilla extract
- Add the sifted flour to the bowl with the batter in batches, mixing briefly on low speed. Stop mixing when you can still see some flour remaining on the sides of the bowl.
- Then finish mixing the batter only with a spoon.
- Transfer the batter to the prepared baking pan.
- Tap the pan with the batter firmly on the countertop a few times to release any air bubbles.
Step 3 – baking the cream cake
- Place the pan with the batter on the middle rack of the oven.
- Bake for about 45–50 minutes, until a toothpick comes out clean.
- After baking, remove the cake from the oven and let it cool—it may sink slightly while cooling.

Why is it worth baking this cream cake?
I first spotted this cream cake on TikTok, and it caught my attention so much that I started digging into it. I found the recipe page, and after making a few small adjustments of my own, I decided to bake it. I had never before made or eaten a cake that was prepared with whipped heavy cream and then baked. I had made cookies with heavy cream before, but in that case the cream wasn’t whipped—it was simply poured directly into the dough. So I was very curious to see how this whipped cream cake would turn out. And I have to say, the cake surprised me. After cooling, it slightly sank (I baked two cakes at once, and unfortunately I had to open the oven during baking, which affected it a bit), but it didn’t collapse or become dense. On the contrary, it was extremely fluffy and at the same time moist—almost velvety in texture. In its lightness it resembles sponge cake, but it isn’t dry like a traditional one. This cake is definitely worth baking and saving the recipe for later.

What ingredients are needed to make a cream cake?
To make this cake, you only need a few basic and very easily accessible ingredients. Below is a simplified list of the ingredients I used, along with possible substitutes.
- heavy whipping cream – 30% fat cream works best here. I used liquid cream from a carton; remember to chill it thoroughly before whipping. That’s why you should place it in the refrigerator at least a few hours in advance!
- wheat flour – cake flour works best here, but you can also use flour with a protein content between type 450 and 550, you can use all-purpose flour too.
- vanilla – to give the cake flavor, it’s worth adding a bit of vanilla. This can be vanilla sugar, in which case you add it together with the powdered sugar, or vanilla extract or vanilla flavoring. You can also use other flavorings, such as lemon, orange, rum, or almond.
- sugar – I used powdered sugar here so it would quickly combine with the whipped cream and dissolve easily. If you don’t have powdered sugar, it’s best to replace it with fine granulated sugar.

How to serve cream cake?
The cake is very simple and can even be served just by dusting it with powdered sugar on top. However, you can also serve it like I did—with a bit of whipped cream and fruit. I made a fruit jelly using a frozen fruit mix. You can also prepare a fruit jelly yourself, use homemade jam, or for example stewed apples. This cake will also taste excellent with sliced fresh fruit. You can additionally serve it with chocolate or caramel sauce.
How to prepare the cake so it doesn’t sink after baking?
The cake is delicate because of the whipped heavy cream, which traps a lot of air during mixing. That’s why, after transferring the batter into the baking pan, you should tap it to release some of that air. Also remember not to open the oven during baking—only near the end of the baking time should you open it to check whether the cake is done.
You can also use a sponge cake baking trick: immediately after baking, drop the cake pan (from a height of max. 100 cm) onto the floor. The cake may slightly sink as it cools—when the hot air trapped inside the cake cools down, it decreases in volume, causing the cake to become lower.

How to store cream cake made with heavy whipping cream?
After baking and cooling, the cake is best covered with a dome cover or placed in an airtight container with a lid. This will help it stay fresh for a long time and prevent it from drying out. It’s best to store the cake on its own, and add toppings such as whipped cream and fruit only when serving.
How many calories does a cream cake made with heavy whipping cream have?
In the table below the recipe, I provided the calorie content per 100 g of cake. If you divide it into about 12 similar slices, each one will have approximately 260 kcal (carbohydrates: 37 g, protein: 4.5 g, fat: 10.5 g). This calorie count refers to the cake itself without any toppings or additions.
